Skiers French Toast for a snowy day

<p>Since I’m home snowed in with no work today, thought I’d share this yummy and EASY recipe for feeding hungry helpers who are kind enough to shovel you out. Feel free to share your own favorite ‘cabin-fever’ recipe too!</p>

<p>Skiers French Toast</p>

<p>2 T corn syrup
1/2 C butter
1 C packed brown sugar
1 loaf Italian bread cut into 1/2" slices
5 eggs
1 1/2 C milk
1 t vanilla
1/4 t salt</p>

<p>Combine corn syrup, butter and brown sugar in small sauce pan and simmer until syrupy. Pour over bottom of a 9x13 baking dish. Place bread slices snugly over syrup mixture. In bowl, beat together eggs, milk, vanilla and salt. Pour over bread and sprinkle with cinnamon. Cover and refrigerate overnight (or until all liquid is absorbed). Bake uncovered @ 350F for 45 minutes. Cut into squares and serve hot or it can be re-heated. We like ours served with fresh fruit salad.</p>

I made it for Christmas morning. In general, thumbs up from the fam, although I thought the challah made it a little too sweet and was wondering if something like Italian bread might work instead (I guess so!). (FWIW, I didn’t have any Grand Marnier so added a little bit of grated orange peel. It <em>was</em> really easy, and I loved that I could make it the day before.)</p>
