Anyone have any advice on good information sources, recommended websites, personal techniques and recipes, etc., for smoking meat? This would be pork, chicken, or duck, and more farm scale than just home kitchen scale.
My husband smokes meat as well as fish. He has a Traeger Timberline smoker, which uses wood pellets as fuel. He has a larger size grill and has smoked a turkey and large numbers of ribs. Everything from the smoker tastes great. Google Traeger and you can see different types of smokers.
Can’t help with large-scale smoking, but you could smoke a sneaker and I would eat it!
I will have to get back to you next week. My husband’s coworker smokes meats on a smoker he got in Texas. We ate his BBQ - yummy.

We use a Komodo old ceramic smoker. H smokes a turkey and other meat, but mostly turkeys for Christmas and New Year’s.
Costco has big green egg ceramic smoker it brings in periodically that is similar.
These are good for personal or even extended family use but too small for farm or huge scale.
