"South Beach Diet" cookbook recipe favorites?

<p>I’ve pulled out my old light blue “The South Beach Diet” cookbook from Dr Agatsoton 2003. Do you use it and have any favorite recipes? </p>

<p>DS comes home this week, so we’ll likely eat whatever he suggests. But after that, I’m gearing up to get into healthier cooking regimen.</p>

I used to make batches of these - very handy to freeze / microwave. They come out very flat, so I like them better with 3 more whipped egg whites folded into the batter.</p>

<p>colorado_mom, I think the roasted veggie recipe I use originally came from the South Beach book but I’ve used it for so long that I can’t be sure! I’m not at home right now so can’t check but our family loves those roasted veggies. I make them often.</p>

<p>I make the gazpacho all the time. I also think there’s a recipe for little omelettes done in a muffin pan. I make 2 dozen and freeze them and take them to work.</p>

<p>The South Beach Diet cookbook is where I learned about cauliflower “mashed potatoes”. That alone was worth the price of the book for me!</p>

<p>patsmom - The cauliflower recipe on page 171 does look interesting. Do you follow the recipe as-is (1 ounce I Can’t Believe its’ Not Butter spray, 1 ounce Land O’Lakes Gourmet Fat-Free Half and Half)? Or do you use another wing-it approximation?</p>

<p>I mostly go by the principles as in what foods to avoid. But I don’t use artificial sweeteners. Sometimes Stevia, but I feel like a little sugar and butter are ok. Just me.</p>

<p>colorad0_mom, I don’t use the fake butter spray but instead I add a dab of Smart Balance buttery spread. I do use the Land O’Lakes fat-free half and half, though. If I’m temporarily out of it, I substitute whatever I do have, whether it’s a different brand of half and half or a splash of skim milk. I have to vary the quantity of liquid depending on how large the head of cauliflower is. An ounce can be too much or too little – you just have to get the consistency right.</p>

<p>There is a lettuce roll up with some kind of dressing, I believe with cilantro that is in phase 1 in that book that I really liked. Did you notice how book one he kept preaching fresh natural foods and nothing prepackaged - now he got on the bandwagon and he sells the very things he spoke against.</p>

<p>patsmom - Thanks. I have no interest in the fake butter spray. But perhaps I should start gathering more recipes that use fat free half-half. Or go with the skim milk that is usually already in the fridge. </p>

<p>eyemamom - Oh, I really like cilantro. Funny comment about the pre-packaged South Beach brand. </p>

<p>I do often follow the SB hint to snack on low fat laughing. I prefer it with crackers or eaten alone, but the healthier recommended option is to squish it onto celery sticks.</p>

<p>There’s a great recipe in that cookbook for Coconut Chicken–basically chicken breast, spices, a few tables spoons of ground macadamia nuts, and light coconut milk. My H followed South Beach and lost about 20 pounds. This was one recipe that everyone in the family liked.</p>

<p>That sounds good for me. DH does not really like coconut, but perhaps I’ll try it as a “cook’s choice” item sometime.</p>

<p>Time to resurrect this thread… DH has started Southbeach Phase1. I’m partially on board and will be more as time goes on. Please post favorite recipe page references or web links :wink: </p>

<p>Tonight we enjoyed Garlic-Sherry mushrooms, a recipe we once cooked in a “Date night in Spain” claass.</p>

<p>The cauliflower “mashed potatoes” are very good. Be sure to drain the cauliflower very well or they’ll come out watery. Another recipe not in the book is cauliflower “rice”. There are several variations online but I like this one.

The Greek salad recipe in the blue South Beach Diet book is one I make often.
One of the best websites for SBD-friendly recipes is [Kalyn’s</a> Kitchen®](<a href=“http://www.kalynskitchen.com/]Kalyn’s”>http://www.kalynskitchen.com/) . It’s well-organized, easily searchable, and all of the recipes I’ve tried have been good.</p>

<p>Good luck! My husband lost 30 pounds on the South Beach diet. I did it with him since it was easier to just make one meal for dinner, and I lost 15 pounds myself! Once you get through Phase 1, we found the rest was pretty easy.</p>

<p>We make a lot of the recipes from Kalyn’s Kitchen, also.</p>

<p>H & I lost 28 & 34 lbs. respectively. We need to go back on the diet now after the holidays. I do the mashed cauliflower all the time, as well as the gazpacho and the little egg things in muffin pans.</p>

Loved it.</p>

<p>One variation on the cauliflower rice that we love is to add lime juice and chopped cilantro just before serving. This goes especially well with fish!</p>

<p>We just made this last night; it made enough for two, for two nights, so we don’t have to cook today. We put it in the ‘will-definitely-make-again’ category. Says it’s Phase 1.</p>
