I know most other Stanford applicants will have just as strong if not stronger applications. I also know my SAT score is a huge hole in my application. But with my IB grades, ECs and the work experience: would I stand a chance, is it worth considering applying to Stanford? I am apprehensive about applying EA as I am very enthusiastic about Chicago as well. Also, financial aid is not required.

Intended and definite Major: Economics; I love this subject.

Definitely retake the SATs.
Don't necessarily put the 1 year activities on your App... mention the cricket, debating, and model UN. These show leadership and dedication.
It's good that you have IBs.
Mild reach?

Thanks for the feedback. Yea, I hope to improve on those SATs. Should I remove the stuff about Student Council as well then? In our school, you can only join the StuCo. in 12th grade, and I thought being treasurer might give me some additional experience in the monetary side.
