Does anyone know what is the best STEM OR health degree for a career changer who has a communication degree?

Why? Because it is vague and ultimately unanswerable. Decide what what you want to do and then someone can tell you how to get there. Or research how long it would take to get various degrees (nursing, nurses aide, physical therapist, etc) and what jobs they qualify you for, what those jobs pay, etc. Then pick the one you like best.
There is not going to be some “STEM OR health degree for a career changer” that fits every person’s goals.

Maybe you should consider taking some courses at your local community college to see what interests you. They have advisors and career counselors who could help you.
