Filling out the FAFSA, is there any way I can just put down my stepmoms information, and not my fathers. I live with them both but my father refuses to provide his since he is self-employed and makes hardly anything. I know most people would say his information would be preferable, but I’d rather just put down my stepmom’s even if she makes much more.
No.
This isn’t something you get a choice about. You have to put both. Parents who want their children to get aid cannot refuse to provide the information. But the less they make the better your chances are for aid.

If he hardly earns anything, then why is he refusing?
Doesn’t your Stepmom know his info? Can she put the info in FAFSA?
No. If you live with your dad and stepmom, you need to use the income and assets of both on your FAFSA.
