Hi, I am a student from UCT (University of Cape Town) applying for a Student Exchange program through UCT. The biggest challenge I face right now is finding a matching course at University of California (any one).

ApplePen, you will get better responses if you describe specifically what your available choices might be. It is unlikely that you will get anyone to read through the 192 page handbook for your college.
Can you choose any UC campus? What kind of environment are you looking for?
Just as a head’s up, most kids in the UK who are looking as a year at a UC would overwhelmingly pick UCB or UCLA for a combination of prestige, academics and “typical US college experience”.
