I use baking apples but one thing, I use a corer/slicer for uniform apple pieces which cook evenly
Rhode Island Greenings are a classic pie apple. Very, very tart, kind of big and lumpy looking, not an eating apple. I have never heard of a Green Delicious, are you sure about that? There are Yellow Delicious, which are popular for making tarts and the like in Europe because they soften but hold their shape, and don’t exude a huge amount of juice. (Unlike something like a Mac, which has more flavor, IMHO.) They are kind of greenish sometimes. ![]()
Although not green, obviously, Red Gravensteins are good for pies, because they cook nicely but hold their shape. I used Red Gravensteins from my neighboring apple orchard the year I won third prize in the apple pie competition at the county fair.
Good old-fashioned apples for pie include Macs (very juicy, so you have to adjust the thickening agent), Cortland, Macouns, Jonathan, Winesap, et al. I think a mix is best, most of the time. I haven’t tried any of the fancy new hybrids, like honeycrisp, in pies. I like Granny Smith, but they don’t get that wonderful softish, effulgent texture.
I honestly don’t know why Red Delicious exist. I find them horrible in every way.

Today we had our Thanksgiving feast at church after the service. I brought home the carcasses of the four turkeys, which are as I type cooking away in a stockpot on the stove. (Yes, I own a stockpot large enough for four turkey carcasses!) May use the stock to make something for our monthly community dinner…
Yes @Consolation, I was referring to Yellow Delicious, which are pretty green, at least the ones around here. They are, to my mind, the not better cousin of the Red Delicious, which is an apple I can live without in any incarnation. They are too soft and too mealy and I don’t find that the yellow (as opposed to green
) Delicious hold up to baking at all.
I actually like Golden Delicious for baking pies and crisps. I use them in combination with other apples. It’s good to have combo of flavors and ones that hold their shape and those that get softer, IMO.
And that’s why there are so many varieties - as with so many things, no rules, use whatever works for you!
I need to ask how many servings the corn casserole makes–?
I tried is about 5 years ago and it was not good so I am sure I messed it up as everyone here loves it.
I just remember I could not get it to cook through–
So please tell me the texture to expect,
how much one recipe makes and what size casserole or type of casserole dish?
If you double it what size pan do you use?

I made the recipe that FallGirl posted above. I used an oval dish that is probably just a little smaller than a 9 x 13, similar deepness. I definitely had to bake it longer than posted - it rose to be at least level with the top of the dish. I think the single recipe made a lot - probably 8-10 servings? I guess it depends how big your servings are but on T-Day, there are usually so many dishes to me serving sizes are smaller anyway. With small servings I’d say at least 10-12 servings.
My recipe for the corn casserole says to bake 20 minutes, top with cheese, and bake 20 minutes more, which is less than FallGirl’s recipe in post #57. I usually make it in a 7 x 11 (approx) Pyrex dish and it always gets done. It is soft but has a bread-like texture. Like abasket said, we have so many different items at holidays that most people take less of each dish so it should serve 10-12.
ETA: Sometimes it does not rise as much as others and is not as good. Make sure the box of Jiffy is fresh and add it last, stirring just until blended, then bake immediately.
Got all my T’giving dinner shopping done today. H went along to help. I was really surprised we finished in only an hour and the market was packed. Since it’s only the 3 of us I’m keeping it simple. Turkey, stuffing, cranberry sauce, roasted brussel sprouts w/pancetta, baked sweet potatoes and sweet potato pie for dessert w/vanilla bean ice cream. I bought an 18 lb turkey so plenty of leftovers and nice size carcass for making huge pot of turkey soup.
Already have plenty of noshes for pre dinner w/drinks.
Only thing left is to make a trip to the liquor store for wine but I’ll wait until Wednesday when S will be home to go with me so he can pick a few of his favs.
I split my batch, 2/3 in a 7" round, deep dish, got a good 8 portions. It took at least 50 minutes til the center just stopped jiggling. The rest went in a 5x7, for my D.
Mine came out a bit firmer than a corn souffle. Some recipes call for egg, but without that, there’s no issue with slightly undercooked. If I add more sour cream next time, it’ll be softer, which I’d guess is just fine.
It’s great cold/next day, too.

Don’t tell anyone, but after a morning appointment and running several errands, I am not relaxing on the sofa! I still have a grocery store run, but I have decided to go tonight or in the morning. My children and their spouses all are flying in today at different times with my SIL arriving first last night. He picked up my son, they went to lunch, and are not going to get their wives at the airport. I am enjoying the quiet for a few moment before the noise arrives
Looking forward to them all being here, but also enjoying the house to myself for a moment.

I was enjoying the quiet until my daughter started texting in a fit of rage as her brother decided not to come to the airport and get her, instead having her take Uber to meet the other 3 at a bar where they are relaxing waiting for her. She has been sick since Friday and really was looking forward to coming to the house to rest for a bit before dinner. Now they will be in traffic and it will take then a hour to get to the house due to traffic. My youngest is not a happy camper so I might need something more than wine at dinner!
Sounds like your youngest needs the wine. 
Why didn’t she just take the Uber to your house?
@emilybee Most likely due to the cost and wanting to be with her husband; she has been in the states for a week working. Where the others are is closer to the airport and we live in the burbs. She can be a cranky one even when she isn’t sick; she just feels her bother did what was best for him without thinking about others. They may be married and in their 30’s, but when together they act like children!
