We put in one sweet potato and about five yellow potatoes, and 8oz Gruyère as the cheese, per suggestions from the comments. Put a sheet pan under the casserole; it bubbles over. Very good, and not as heavy as you’d expect from all the cream.
You could throw some thawed frozen corn in the blender to mimic the canned creamed corn, but a hundred bucks says that any snobby corn fan will taste the original casserole with the canned cream corn in it and stop complaining forever. It will be delicious with either frozen corn kernels or “niblet” dry-pack canned corn for the non-creamed part.
Ok, thanks to @veruca, have two apple cranberry cobblers in the oven and will see how it goes. H loves apples and cranberries are in season and oretty easy to get.
Someone brought this today. roasted brussels sprouts, roasted squash, pecans, maple syrup and olive oil. Recipe called for dried cranberries, but the one I had substituted pomegranate seeds. Yum and very pretty!

@BunsenBurner , I made that spinach gratin too. It was good , but we have a lot left. The calorie part was ok because my husband and I are eating low carb. This was the first day in four months that I ate carb rich foods. I made a few substitutions where I could ( used truvia in place of sugar in crustless pumpkin pie, ice cream and even some of the foods I didn’t eat )
I am still so proud of myself for spending Wednesday prepping my vegetables and bread dough for yesterday’s feast.I usually dedicate the day to making pies and tearing up the bread for stuffing, but this time I started early and added a few more tasks. It made the next day so relaxing and enjoyable! They were really easy to start ahead, and finish in the morning. And a really huge success. I’m not a great bread baker. The first time I baked bread, we were thinking of tossing the crumbs in the back yard for the birds, but decided they’d probably break their poor beaks. These rolls were tender and sweet and delicious.
No brussels sprouts this year. I love them, and love reading all the great ways to cook them, now that we’ve all discovered them. I’ve made them for Thanksgiving in the past, just plain roasted, and also with a balsamic glaze.
@Beil1958 (post #60)…the Sagaponack corn pudding was huge success! Everyone loved, including the gluten free guest. Probably contributed to extra pounds on the scale, but for once a year, definitely worth it…
D1’s partner made an apple pie. He makes a great pie. D2’s BF made a chocolate pecan pie and his own homemade peanut brittle that he sent along with her. Totally unexpected and he didn’t even come for dinner! He was at his parents. Nice guys! We had more than enough dessert. ( I had also bought some desserts and vanilla ice cream.)
We had asparagus as someone on here suggested. I added lemon pepper. H made a great stuffing with apple and crasians and vegetables. And we DO stuff the bird. Have eaten stuffing that way all my life.
