Thanksgiving Snack Suggestions Please

<p>Our family will be gathering at our house for Thanksgiving - we will have 22 for dinner. We eat at 6 so I’m looking for EASY (but yummy) snack suggestions for during the day while everyone watches football, plays games, snipes at each other (well, that’s only my sisters-in-law who will do that!!) Snacks beyond chips and popcorn are NOT my strong suit!!</p>

<p>OMG, you have to think of snacks ALONG with the main dinner!???</p>

<p>I say some of those 22 coming BRING the game snacks!</p>

<p>But if not, how about summer sausage, bite size cheese, veggies (buy a veggie tray from Costco if you can) and some apples to slice with some caramel dip. Chop chop and you’re done!</p>

<p>Two snacks that go over big at my house and that are easy to make:</p>

<p>1 Spinach Dip–I use the recipe on the back of the Knorr dry vegetable soup mix.</p>

<li>Mexican Fudge–the recipe is on the back of Mrs. Refro’s greeen salsa but in case you can’t find that brand the recipe is below and I would guess any green salsa would work.</li>
</ol>

<p>Mexican Fudge</p>

<p>Ingredients: </p>

<p>1 lb Grated Cheddar Cheese
1/4 jar Mrs. Renfro’s Green Salsa (4 oz.)
3 Eggs, well beaten </p>

<p>Instructions:
Spread half of cheese on 11x9 or 11x7 baking dish. Combine eggs and salsa and spread on cheese. Put remaining cheese on top. Bake at 350 degrees for approximately 30 minutes. Cool 10 minutes. Cut in 1" squares. Serve on tortilla chips.</p>

<p>I do sweet/spicy nuts, guac, dilled shrimp (made the day before), and cheese encroute…</p>

<p>just made salmon/caper/cream cheese roll ups on flour tortilla and they were a HUGE hit with the twentysomething crowd. </p>

<p>I just spread the cream cheese on the tortilla, put some smoked salmon on that, sprinkled some capers, rolled it up and wrapped it in plastic wrap over night. We traveled the next day to a fball game in Boston so I kept them chilled, then sliced with a very sharp knife the next day. I made five tortillas. Kids loved them.</p>

<p>I will assume you don’t want an appetizer that needs to be cooked in the oven since you will be busy that day! What about a simple salsa? Our football fans like corn and black bean salsa. </p>

<p>1 can black beans, drained and rinsed
1 can corn, drained
1 chopped, diced red onion
2 large avocados, chopped
diced tomatoes
1 can chopped chilies…heat level to taste!</p>

<p>Add lime juice, salt and pepper to taste. Serve with Scoop Fritos or tortilla chips</p>

<p>Or my easy stand by… Fruit salsa!</p>

<p>Look for the seasonal Stacey’s pita chips out there - gingerbread flavor, for the dipping chip (here they are available at Kroger in smaller bags, at Sam’s in bigger bags)</p>

<p>Another favorite is a platter with chilled shrimp and smoked salmon on a bed of lettuce. I then have a remoulade or cocktail sauce and lemon slices on the side along with some cream cheese, capers and sliced baguettes.</p>

<p>I keep snacks light. I usually serve some cheeses with summer sausage, a platter of grapes, sliced pears and apples with cheese, some nuts and a veggie tray.</p>

<p>I’ve recently discovered Buffalo Chicken Dip. Goes great with Scoops tortilla chips! There are lots of recipes online but I usually just buy it at my local butcher shop.</p>

<p>My MIL used to put out bowls of nuts and chips-n-dip/hummus for early snackers before her blowout thanksgiving meal. My suggestion: nothing that puts any extra stress on the cook!</p>

<p>Some turn up their noses when I suggest this, but I LOVE it. Take a brick of cream cheese and mix it with a can of tuna (drained). You can roll in parsley and chopped nuts, if you’d like a pretty ball…but I just put it in a bowl and serve with Triscuits.</p>

<p>A brick of cream cheese topped with cocktail sauce and canned clams on crackers.</p>

<p>All those frozen munchies at CostCo could be good too.</p>

<p>Ellebud, my friend who hosts us for Thanksgiving every year always puts out sweet/spicy nuts, and I always refuse her offer of the recipe–that stuff is so delicious it’s like legal crack, and I am afraid of what would happen if I knew how to make them!</p>

<p>These are not extravagant - but they get eaten.</p>

<p>Cream cheese- I spread it on a platter. Cocktail sauce on top. Thawed frozen small shrimp. Crackers with it.</p>

<p>Crock pot. Pound of cooked hamburger. Block of Velveeta cheese. Can of rotelle. Serve with tortilla chips.</p>

<p>Wrap figs in bacon. Broil.</p>

<p>Costco’s spinach/artichoke dip and pita bread crackers from TJ (if you have some spare oven time and food prep time, spinach dip stuffed mushroom caps are great)</p>

<p>Lots of cut up veggies and fruit.</p>

<p>We serve a platter of all sorts of cheeses and nuts, plus guacamole. My DH makes crab-stuffed mushrooms and I make spinach balls.</p>
