We had a lovely Father’s Day/JustADaughter birthday dinner last night. She’s been super busy at work, and it seems to me that T-Pain is smitten with her designs. He’s been a repeat client no less than 6 times, and each time he loves it just as much. Anyone who knows me would laugh that I’m bragging about cooking, but this chicken paella recipe I have tastes better than any paella that I have eaten in Spain. It is so good!

The author responded: Only salad and bread are really needed to complete this dish. Not in my world. This answer misses an essential addition–wine. It would be interesting to read recommended wines to serve with this dish.
Speaking of wine, we just shared this with friends last night. 1990 vintage. Yum! We let the waiter and sommelier taste it (I brought it from our cellar and paid the corkage fee).
In Spain we went to a vineyard and made Paella (well, the guide made it but we helped by asking questions and adding things). We had Cava with it as that was the specialty of this vineyard. It was very good and light. I don’t think we had any other food with the paella.
Seeing these biking brags reminds me to brag about my son.
3 years ago or so he did a 100+ mile ride with 10,000+ feet of elevation gain, and wound up having 3 knee surgeries afterwards. (Later it turned out to be a foot problem and not a knee problem).
Well, earlier this month he did a very similar ride and finished within the top 5 for 2 of the timed parts, and top 10 for all 3, out of lots of people. He was so excited to do that well, especially given the competition, and he said it was fun.
Ha, in my world, the assumption is that of course there’s wine, no mention required. It’s like breathing air, of course you do it. Though there’s likely some type of wine that goes better with it than others. I don’t see any reason to serve anything other than wine with it, it’s a complete meal (unless you have guests and you’re being fancy).
I think the problem with a wok is that there would be a hot spot in the bottom and paella you don’t stir constantly. I’ve only seen it cooked in a big flat pan. you have to cover and let the rice cook without taking the lid off.
Maybe a cook more talented than me could figure out the wok method.
She performed a 90 minute resuscitation on a 55 YO male who had coded while his wife was driving him to the ER. He had no pulse at all for the first 45 minutes he was in the ER. It then took her another 35 minutes to stabilize his heart rhythm since he was in V-tach once his heart started beating. When she left (2 hours past the end of her shift), he was on his way to the Cath lab and then to ICU. He’s going to live, but, even better, he’s apparently neurologically intact. He was trying to sit up and pull out his intubation when she left.
I love True Crime and listen to a lot of podcasts, watch CourtTV, even listen to the Supreme Court broadcasts occasionally. I found out CrimeCon is coming to Denver this year, but then learned tickets are $400 (and don’t include parking). Wouldn’t you know the $800 and $1500 tickets were sold out (darn). But then I read the fine print and they allow volunteers to attend for free. I’ve been accepted as a volunteer.
