Salad is for dinner at our house at least 3 times a week. I don’t use iceberg or romaine in our salads and we live in an area that does not have the cyclospora issues. Most times I put chicken in our salads and I make my own dressing. Sometimes I’ll add some tortellini to the salad and occasionally some steak if we have some leftovers. I always put lots of fresh veggies and summer fruits in the salad depending on the time of year.
My husband is not a fan of lettuce, so oftentimes our salads are tomatoes, avocados, cucumbers with some green onions and herbs. No dressing, just a splash of olive oil and balsamic vinegar with salt and pepper to taste. We eat this “salad” at least once a week as a side to a protein
I’m another one who eats a lot of salmon. My go to is baking it on a sheet pan @425 for 12 minutes. I put some cubed sweet potatoes tossed with olive oil, sea salt and garlic powder in ahead for 15 minutes. I use a 1:1 mix of butter and miso on the salmon ( you can add some honey).
Easy and healthy.
I bake salmon, too, when it is not too hot to use the oven, too.
When it is too hot, salmon goes on a cedar plank on the grill. My baking method is same temp/time as FallGirl’s. I use a small amount of soy sauce, lemon pepper, and Old Bay seasoning. Works great with a fatty salmon. The leaner kinds require some buttering.
I try to mix it up, so I’m not bored and eating the same thing all the time. I find that stultifying.
I do have some basics – I like a wide variety of Asian cuisines so sometimes I go for something Thai-flavored, sometimes Indonesian, or Vietnamese, Japanese, but honestly these are all just inspirational flavor profiles. The food I make is very much not authentic. I throw in some good farmer’s market veggies, some tofu, often noodles, sometimes rice. That’s probably my go to.
Sometimes I cook salmon for H, but I don’t like it as much as he does. I vary how I season it, because, again, I get bored with food easily. I used to like salmon more, but it’s not my favorite any more. It is H’s, though, so I try to do it once every 2 or 3 weeks.
Ha ha! I like this too, but my son/DIL call it “fruit salad” when they mix avocado, bell pepper, tomato, lemon juice, maybe cucumber? Whatever are botanically “fruits” and we all think it’s hilarious.
@BunsenBurner my H was not always a big fan of lettuce, but with the variety of salads I make he has come over to the “green” side!
My husband grills/smokes salmon every week. I love it. Often with grilled vegetables or sometimes I make a vegetable.
H & I are pretty low maintenance & can eat mostly the same thing nearly every day without too much trouble with boredom. S can eat raw fish & rice a lot until he gets bored. D likes variety, but can repeat most things at least weekly. All in all, I feel fortunate as people in this house will make/buy their own food if they don’t find whatever is served to their liking.
We had a lot of oatmeal for breakfast for most mornings and a lot of peanut butter & jelly sandwiches on whole wheat bread when the kids were very young and we were trying to stay ahead of our bills. We still eat oatmeal and PBJ, but not nearly as frequently and not for dinner. Now, back to dinners.
I think my husband would be happy to order sushi every night! Maybe my son too. We walked by a sushi place recently and he sighed and said, “I REALLY miss supermarket sushi from Japan.” (He lived there for several years.)
I could eat a salad everyday. There are so many different ways to make salads, and so many different toppings, and dressings. Salad, and a slice of nice French bread with sweet creamy butter. That would be just fine!
How about “the breakfast that you can eat weekly”, or is that a separate thread?!
Ours is shakshuka, a weekend favorite. There are so many recipes out there and so many ways to tweak it (we like ours fairly spicy) but please, please do not use canned tomatoes which many recipes do - it is so much better with fresh.
I often do, and often with leftover chicken/steak/salmon/grilled veggies/whatever from the night before.
One of our favorite salads is what was just called “ensalada de la casa” in a few restaurants we ate at in Andalusia. Basic salad ingredients with hardboiled eggs, tuna, beets and corn, just dressed with olive oil and balsamic vinegar. Protein packed with a bit of carbs for good measure, and yummy.

Every. Freaking. Day! We eat the same stuff with small variations: 1-2 eggs (easy over or scrambled), cup of yogurt, cup of strawberries and blueberries, a small toast, and coffee. Always 2 16 oz cups of coffee!
Omg I can’t eat much early in the morning so I could never do that on a weekday. My weekday breakfast is a slice of toast (Rustik oven grains and seeds bread, half a slice if it’s the big pieces at the end) with one of (1) peanut butter (2) marmalade and a slice of Swiss cheese or (3) pecks anchovette, and bonus points to anyone here who knows what that is ![]()
The title has “dinner” my original thought - it’s totally ok to branch out to other meals now …

Do you do a rinse and repeat daily lunch? My SIL who is a very adventurous eater, cook and baker told me she has packed the same lunch for work for years! Something like a PB and J, raw vegetables and cottage cheese or something like that! ![]()
I always eat breakfast and love making a fun breakfast but I change it up all the time. But I do every weekend pick one day to do either pancakes, waffles or French toast.
I have little variety with breakfast. I rotate between whole wheat English muffin with cream cheese and smoked salmon, homemade egg sandwich with 1 sliced turkey sausage and 1/2 a slice of pepper jack cheese, and yogurt with fruit and granola. And Rishi earl grey tea. Every once in a blue moon I’ll have PBJ if we’re out of cream cheese or smoked. All bets are off if we are traveling.
My H eats dry cereal for breakfast pretty much EVERY.SINGLE.DAY.
An aside… I read something that surprised me about dry cereal. I read something recently about a cereal that claimed to have Xg of protein per serving. BUT, that was if you eat it with milk. That seems like false advertising to me.
I eat fruit (fresh or frozen berries from Costco normally) and yogurt for breakfast most days, but I also like avocado toast and could eat it at least once a week.
I could eat avocado toast daily or for pretty much any meal. I’ve been really enjoying toast with wafers of chocolate from Denmark. They said it was a very common, danish meal. I could eat it every day but alas we will run out as we only had so much space in our suitcase and I haven’t seen them since we left Denmark.
