I recently got accepted to a summer program at my local state flagship that my counselor introduced me to. I will definitely thank her, and others who helped me during the application process, but I feel a slight obligation to buy a card and insert a gift card, but the card and gift card seems to kiss-up like, and unnecessary, because I’m not applying to college or anything.
Would straight-up “thank you” be okay, or must I purchase a card and include a gift card?
I don’t see why you have to get a gift card. Why can’t you just send a thank-you card? That’s what I would do personally.
Just send a handwritten thank you note. That means more than a Starbucks gift card ever will.

Do I use cardstock or is regular paper fine? Do I write only about this program, or add other info?
To thank teachers who wrote recs for me, I just purchased cards from the dollar store and wrote them nice notes (: Definitely also felt that giving gift cards was a little kiss-up-y.
Stop obsessing about the fiber density of the paper and just do it already.
