So I applied to the following schools below:
USC
SDSU
CAL POLY SLO
CSUN
CSU CHICO
UC RIVERSIDE
UCSB
UC SANTA CRUZ
UC IRVINE

I have all the requirements done for all the schools. Although, I am registered and taking sociology and I have ONLY reported this course on my uc application that I am taking it. Since I already have my requirements and IGETC done for all of the schools that I have applied to, will dropping the course affect my application for all UC schools. I know for the cal states and USC it won’t. Thus, I am still within the Drop without W date.

Call them to find out. There are provisions in your acceptances that require you to have a certain gpa for your spring semester. If the soc class is just an extra course, I’m pretty sure they won’t have an issue with you dropping it. But you HAVE to call first to find out.
