<p>Doing a very simple last minute extended family brunch. I’d like a couple of “tried and true” recipes that have a bit of twist (ie: tuna with onions, egg salad with paprika/scallion).</p>
<p>Egg salad made with tiny bit of finely chopped sweet onion and capers, blended with mayo, some white pepper. My college aged son likes it, so it should please others.</p>
<p>lorelei, That sounds good. If I do that, then I want to stay away from onions in the tuna though. Tuna with sweet onions is very good too.</p>
<p>I make my “special” tuna salad with diced apples, and diced celery…dice them into very small pieces and blend with the tuna. Add the mayo and make them into sandwiches using that little cocktail rye bread.</p>
<p>How about some chicken salad ? easy as making tuna salad. Just shred or cub some cooked boneless breast, mayo,finely minced onion and fresh dill. Oh and a little salt and pepper</p>
<p>For egg salad I use sweet and dill relish, a little mustard powder, Miracle Whip (we don’t like real mayo), a touch of sweet chopped onion and a little paprika sprinkled on top.</p>
<p>Egg salad: eggs, mayo, chopped onion, sweet pickle relish, salt and pepper.</p>
<p>You can put onions in everything and it will be improved, well, not vanilla ice cream, but otherwise…!</p>
<p>lorelei, LOL, maybe vanilla ice cream and onions work well when pregnant. There are no guests who are “expecting” in this group! </p>
<p>thumper do you put lemon juice on the apples first to keep them from turning brown? LOL, you might not be able to tell when they mix in with the tuna. Oh, thumper what type of apple? Granny Smith?</p>
<p>lje, my DH is a big fan of chicken salad. If we make that I’ll leave that for him to prepare. I am not a chicken salad fan unless it is chicken a curry. My DH likes to mix grapes into his chicken salad. </p>

<p>If people like curry, put some into the chicken or egg salad along with salt and garlic and celery and diced apple (I don’t think if would go with tuna, however).</p>
<p>Marite I am going to have them over a little bit too early to add curry (more of a lunch/dinner thing to me). I just commented that I like chicken and curry.</p>

<p>12 hard boiled eggs</p>
<p>Mash yokes, add 2 T olive oil, 2 tsp lemon juice, 1 tsp anchovy paste, 1 clove garlic (minced), dash of worcestershire sauce, salt, pepper</p>
<p>Sprinkle paprika on top after filling eggs</p>

<p>No…but I also don’t make it days in advance. I also use Cortland apples which don’t tend to get brown.</p>
<p>If you like chicken and curry…do a google search for Bombay Turkey Salad (it can be made with leftover turkey or chicken) and it is DELICIOUS. It is a nice luncheon salad served on a bed of lettuce with grapes as a garnish.</p>
<p>I like egg salad with fresh dill and chopped shrimp. Tuna salad always gets chopped red onion, parsley, fresh lemon juice, a little white pepper and sometimes chopped capers.</p>
<p>Also nice in chicken salad (esp. this time of year) are chopped, toasted pecans or walnuts and dried cranberries.</p>
<p>Dill weed is quite good in lots of things. When D was young, I would hard boil eggs, peel, halve, spread with a little mustard, a light sprinkle of sugar, bit of salt and pepper…she loved it as a snack…like deviled eggs but without the work!</p>
<p>I’ve been making a version of the Bombay Turkey Salad for years…and the original recipe calls for canned tuna.</p>

<p>marite, Curry is wonderful in tuna salad - I was going to suggest this, until I saw that northeastmom doesn’t want to use it. I don’t know if Formaggio is still in Harvard Square (in the Garage?), but when we lived in Boston we used to go there every Saturday for lunch. They had a great tuna salad with curry, apples, onions, on fresh rye bread.</p>
<p>I’ve gotten a lot of good ideas from this thread. I would make tuna a lot more often if it weren’t for the mercury. S2 loves it.</p>
<p>Costco has a chicken salad that is a great starter. It has dried cranberries and pecans. I add more chicken (it’s a little runny for me), green grapes and walnuts. When I bring a dish everyone asks for this chicken salad and homemade rolls.</p>
