I am a California Resident and I’m going into my senior year
I really really want to get into UCR or UCSC this next year I will also be aiming to retake my SAT this October and maybe squeeze a SAT Math Subjects test during November before I send in my application.I know that I have a low GPA, but will my extracurricular activities even help a little?

Retaking your SAT is a good idea. Another 100+ points will help at both campuses. As you state, your GPA is a challenge. With a 1950SAT and a compelling essay I’d give you 50/50 shot at both campuses.

UCM is more like 80/20.

I encourage you to apply to all 3 but, also explore CSUs like Cal Poly Pomona, Sonoma and Chico and, depending on what you want to study, perhaps SJSU and Long Beach.

Good luck.

Agree with @NCalRent. UCR/UCM and UCSC are your best chances at a UC. Cal states are also a great option and with 23 campuses there are many great choices. EC’s and essays will be considered especially leadership for the UC’s but the most emphasis will be placed on GPA/test ccores and course rigor. Good luck
