Ugh! Dinner Ideas for the Heat

<p>90’s to 100 degrees expected all week. A house that has window AC but not central (so cool, but not AC unit cool!)</p>

<p>I’m drained today just trying to decide what to make for dinner! Was out of town (and eating out) all weekend, so really don’t want to do take out.</p>

<p>Reinvigorate my dinner ideas with some of your cool weather dinners (that at least, aren’t ENTIRELY take out!)</p>

<p>(bowl of cereal would work for me, but not the rest of the “picky” clan…)</p>

<p>How about making things early in the day when it is cooler. Grilling chicken or beef for salads or burritos.</p>

<p>We used to eat “mock tacos” CONSTANTLY over the summer.</p>

<p>Brown some ground beef in a pan. Pour in chili beans (undrained) and possibly a packet of taco seasoning…I can’t seem to remember. Maybe tomato sauce.</p>

<p>Put some Fritos on the bottom of the plate. Top with meat, cheese, and any other taco toppings you like.</p>

<p>Delicious.</p>

<p>Earlier in the day doesn’t work. Already leaving for work earlier in the summer so unless I want to get up when the sun hasn’t risen (which I don’t!) that it out!</p>

<p>Pasta salad for dinner. Ice cream for dessert.</p>

<p>Might have to try pasta salad one night this week.</p>

<p>chicken cesear salad- purchase already cooked chicked from grocery, and make the salad. Yummy and refreshing!</p>

<p>Salads like tuna, and egg. Also cheese platter and/or cottage cheese and fruit. Cold soups such as Gazpacho soup with sour cream.</p>

<p>D2 loves egg sandwiches. Boiled eggs + mayonaise + salad + fresh fruit.
We also have left-over bacon + avocado + bread = avocado bacon sandwiches</p>

<p>Maybe try setting up something in the Crock Pot the night before, refirgerate, and then just pull it out and turn it on in the morning? Pulled pork is pretty easy. Just put the pork in, drain and tear when you get home, add BBQ sauce and serve on buns.</p>

<p>^^ I was just going to suggest the same thing…that’s what is for supper for us tonight, along with fresh green beans and new potatos that are leftovers from last night (also cooked in the crockpot), sliced tomatoes, pepper strips and cucumbers will also be sides.</p>

<p>If I was only cooking for myself all these items sound marvelous! Dang, those other picky family members!</p>

<p>Might be able to make the pulled pork work. </p>

<p>So maybe pasta salad, pulled pork, later in the week maybe take out…this is helping!</p>

<p>Watermelon and ice cream.</p>

<p>abasket, that’s my problem as well. </p>

<p>Heck, I’d be happy with fresh basil, fresh mozzarella and onion with some dressing for supper (yum). I could eat this twice a week in the summer. My family, well, errr, no.</p>

<p>Second vote for gazpacho - that’s what’s for dinner tonight at our house :)</p>

<p>Iced up giant watermelon slices and iced up beers. Espresso and headache for breakfast.</p>

<p>open faced Caprese sandwiches,fresh sliced tomatoes,fresh sliced mozzarella,fresh basil,drizzle of EVO,lightly toast the french or italian bread…</p>

<p>Gazpacho is the best. No cooking! I’ve certainly made caprese salad (tomato, basil, mozarrella the meal at least when dh is out of town.) Three bean salad, or a southwestern salad. Or you can cook something that is real quick - chicken, turkey or veal cutlets pound them thin and they cook in no time.</p>

<p>So on the weekend (in the evening) boil and shred a couple of chicken breasts. Then on one night take romaine lettuce, scallions, tangerine wedges, either wonton strips or those crispy noodles, and toasted almonds and thrown in some chicken and the dressing for Chinese Chicken Salad. Costco sells Feast to the East dressing for Chinese Chicken Salad. Then on another night take a darker lettuce, add apple chunks, blue or gorgonzola cheese, avocado, candied walnuts, maybe some dried cranberries and/or fresh raspberries and a balsamic dressing – I use olive oil, balsamic vinegar, garlic powder and black pepper. Add a loaf of nice bread. Nice and cool.</p>
