Does U of T require its newly admitted students to pay a deposit fee before May? (like most US colleges) Right now, I only see an option to pay before August.

Each college will have their own procedures. It’s best to contact your college directly and to check your ACORN account. The residence usually requires a deposit at the time of application and then a second deposit by August. I believe tuition isn’t due until August (but double check).
