Undergraduate Math Major to a Engineering Grad

I am a junior obtaining a BA in math from a respectable undergraduate school. But now I want to get into the more applied environment of engineering. However I literally have no time in my schedule to take any engineering classes.

Without the proper class prerequisites, what would I need to do to be accepted to engineering graduate school programs as a provisional student?

I am trying to secure an internship at a biomedical research lab through the university I currently attend. Also I have volunteered in biology/pharmaceutical labs before.

I have a 3.8 GPA overall (4.0 in my major), and plan to take the GRE in the upcoming Fall. I have no significant research, and I can’t do an REU this summer anywhere because I will be stuck taking summer classes to fulfill my math major requirements.

What else can I do?
