urgent cookie question!

<p>I have run out of peppermint extract for the mint chocolate cookies I’m making. Is essential oil of peppermint the same thing?</p>

<p>Extract has alcohol. Oil of Peppermint is pure. IDK how much you would use of the latter as a substitute. Probably verrrrrryy little.</p>

<p>Oh, thanks! I did do a little googlingand was starting to get the picture. Good to have confirmation, though. I rarely have cookie emergencies and didn’t know where else to turn.</p>

<p>You all win virtual cookies and here is the recipe from Still Life with Moosewood.</p>

<p>1/2 c butter
1/2 c packed brown sugar
1/c white sugar
1 egg
1t vanilla
1 t peppermint extract
1 1/2 c flour
1/4 c unsweetened cocoa powder
1 t baking soda
1/4 t salt
1 c chocolate chips (I use Ghirardelli 60% cacao)
1 c chopped nuts</p>

<p>Preheat oven to 350.
Cream butter and sugars together with electric mixer at high speed.
Beat in egg and extracts.</p>

<p>Sift together dry ingredients and add to butter mixture along with chips and nuts, stirring until well combined. Drop by rounded teaspoons on lightly greased cookie sheet.</p>

<p>Bake 12-15 min.</p>

<p>I ran out of peppermint extract while making a Christmas dessert and used the same amount of the peppermint oil. Bad move! But now i know…</p>

<p>Yeah, I decided to borrow some extract from a neighbor. I could imagine the oil concentrating in just a few cookies!</p>
