Have you asked both for career outcomes ? In a niche field, that Is important. Neither posts online. They should have detailed specifics - % employed, salary, where working, etc.
Or ask to speak with a student ambassador.
Ask then what they see in regards to placement.
I don’t know about UTD, but Chapman is well connected.
Are you familiar with the Disney College Program? Disney Animation Studios has an intern program. I’m sure it is competitive, but might be something to look into.
chapman will set her up very well for after college. frankly, it would be much harder to network at utd. from what i know, communicating with the financial aid office has proven successful in the past, and so i would look in to inquiring about the cost and see what y’all could get there.
Is Chapman affordable with no hardship to your family and no or minimal loans?
It would be a struggle for us, but we could make it work.
I would really ask for detailed outcomes of such a niche major.
They don’t publish them.

Not a major to overstretch yourself on in my opinion.
So, we’re talking about this BA at UTD vs. this BFA at Chapman?
What kind of job is she hoping for?
UTD is a much more STEMmy school than Chapman; computer science is one of its greatest strengths, and the animation degree leans toward game design. For a kid who’s excited about doing animation within the computer/gaming industry, UTD could be a great choice; and because it’s a BA, not a BFA, there would be more flexibility to focus on particular areas of interest, or veer into more technical skill-sets like UX (i.e. the Certificate in Applied Experience Design and Research would build nicely on the requirements for the animation degree, and could open additional career doors).
On the other hand, if the goal is an all-out effort to break into the film industry in LA, the Chapman BFA would probably position her better… presuming that Dodge can show evidence that grads of their program are getting the kind of breaks she is looking for.
