@shivng Read what myos1364 has written. Please note that undeclared major is not the same as being directly admitted to a major. Earlier I had mentioned that the applicant pool is competitive for CS and Engineering. The fact you were accepted undeclared makes sense now, as your SAT score seemed low to me for a scholarship.
My kid , domestic applicant , got a scholarship but undeclared admission at a similar level university. He chose a direct admit to CS at another university.
You will not be able to change majors easily, especially in CS and Engineering. Especially at VT and UMass Amherst.
If you’re okay majoring in arts and sciences st these places,then maybe okay.
At ASU, did you get direct admit to CS or engineering? If so, that may be your best choice.
