<p>Last year I picked up a box of Walker’s stem ginger and lemon shortbread cookies. I will probably just wing a recipe adding lemon zest and tiny pieces of Ginger to a shortbread cookie recipe but thought I would throw out a request here first to see if anyone has a real recipe. They were very unique and tasty with the sharp ginger bite and lemon zing.</p>
<p>so…what is STEM ginger? The ginger I see, buy and use is a root.</p>

<p>Not a cake fan emeraldkity, although that does look interesting. Also, no one else in my family really liked the cookies so Christmas would be good so I can share with friends, and not eat them all myself!</p>

<p>Have you tried the Carr’s ginger lemon cream cookies? They’re pretty tasty too and pretty easy to find. </p>
