I am a 3rd year and have taken the following engineering courses:
Statics
Dynamics
Solids/Materials Mechanics
Materials Science
Thermodynamics
Fluid Mechanics
Circuits
Machine Dynamics
Manufacturing processes
A few design courses

I have also taken all the calc, diff eq, and linear algebra courses.

Oh and there also those 2 physics courses we usually take our freshman years, but I don’t think they’re considered “core engineering” courses.

For us ME (I guess AE included too) majors, which ones are considered “core?”

Different schools may have some variation in required versus elective courses for the major, but if you look at the curricula for the same major at different schools, it is likely that there will be a set of required courses that most or all of them agree on.

There is probably a semi-rigid list of material that ABET requires for ME. And it seems like every school is pretty similar. But different schools have different courses split up differently, or technically in different colleges within the school, so it’s hard to pin down an official list, as people have said.
