What can I do with a whole watermelon?

I love refreshing watermelon on a hot summer day. It’s just the two of us and D doesn’t enjoy it as much as I do. It seems it’s always a better deal to buy a whole one vs just a few slices. Give me ideas on what I can do with a whole watermelon. (different recipes) so that it doesn’t all go to waste. I can have a slice or two everyday but I am not going to be able to finish the whole thing. If I can get ideas on different ways to utilize the rest of it I would really appreciate it.

Had a flashback to summer picnics years ago. Google vodka infused watermelon.

Look up recipes for watermelon granita. Since it is frozen, good way to use up excess that would otherwise spoil.

What about buying one of those “personal” watermelons? Dulcinea brand?

They are not as cheap per pound as regular melons, but less could go to waste.

A lot of people like those watermelon/feta salads that have been trendy the past few years.

In China we use the watermelon rinds as a stir fry. Honestly it isn’t that bad; a lot better than some other vegetables eaten in the orient.

@squ1rrel
Have you ever had pickled watermelon rinds? They are very tasty.

@doschicos Nope. Sounds good though.

Get a bottle of Tajin seasoning to sprinkle on it. I can eat a lot of watermelon that way. It’s got a spicy kick.

I like to keep jugs of spiffed up water in the fridge during the summer, including watermelon & mint (watermelon & rosemary is also really good). Some people blend or muddle them, but I just drop chunks into the jug of water!

You can also grill watermelon (spears better than squares / 3 minutes on a medium grill. Use it with almost anything else you are having, from salads to barbecue :slight_smile:

Watermelon agua fresca. Lots of recipes out there but I basically blend the watermelon with some lemon or lime juice and sugar, maybe some mint or basil if I’m in the mood. Add some water to your preferred level and you’re good to go.

I’ve had trouble keeping strawberries fresh lately, so I put some in my Ninja, blend them, then freeze in an ice cube tray. Later, this mash goes on a fresh fruit salad or over some dessert. You could do that with watermelon, plain. Or do it as anomander does. as ice cubes for a glass of water.

I think OP is saying a whole fresh watermelon is too much for them, even small.

I am thinking I could cube it and freeze it to later use as ice cubes to add to my water. I also like the granita idea. I am going to look for some watermelon drink recipes. Maybe I can turn some of it into popsicles.

We love fruit cubes in our sparkling water. I puree in my Vitamix, strain and freeze in silicon ice cube trays. Currently in the freezer, I have watermelon, mango, papaya and peach cubes. So refreshing!

Even though whole watermelons can seem like a good buy ($3 for a whole watermelon!) the inconvenience of storing it and then throwing 1/2 of it away because you couldn’t use it all may not make it worth while.

My favorite? Watermelon feta salad. Here are a couple versions:

My S was also talking this weekend about using a pestle and mortar to make a nice pulp/juice for mixed drinks. I’m sure you could also use it for mocktails! He said mixing the watermelon juice and fresca is a good base. :slight_smile:

I grew up in a family that “fried the bacon when the pan was hot.” So when watermelon was in season, we would eat a huge wedge, not a slice. So that’s how I think watermelon should be eaten. I buy the small whole watermelon, and can eat that easily by myself over a few days to a week. Sometimes my husband will eat some, but he’s eats such small servings. Really! When watermelon is good, eat a lot! ?
It’s good at breakfast, some at lunch, afternoon snack…
Low cal, high in vitamin C.

My husband likes to juice, and I found I really like watermelon juice. It is really refreshing.

Dice and freeze the watermelon, about 2 cups worth. Freeze 1 cup of pomegranate juice into an ice cube tray. When frozen, add these with 1/3 cup of sweetened condensed milk to a blender or food processor, then blend until smooth. Pour into a freezer safe container and freeze for 4-5 hours. You’ll have a fantastic watermelon sorbet.

Yum—lots of recipes that sound amazing!
