What do you eat for lunch?

After discussions of bathing suits and my poochy tummy in the Dressing Young thread, I know it’s time I shed my winter pounds. I gain 5-7 pounds each winter and as I’ve aged it settles mostly in my abdomen region. Add to that no muscle tone, and I need to back off the eating. And be more mindful of what I eat.

I’m the hungriest at lunch. I’d like to keep it around 1400 calories and pick up my exercise. I think in a couple months I can shed 1/2 of the pooch and fedl much better.

Lunch is my favorite meal. Most days I make a salad. Greens, a variety of veggies, a protein ( usually chicken, salmon or hard boiled eggs) and a sprinkle of nuts. I make and buy dressings. No recipes, they are different each day.
On other days I’ll have homemade soup- my favorites are minestrone and Italian wedding. Other days I make chicken salad ( chicken, chopped celery, apple, pecans and Mayo and eat it on a Wasa cracker or I’ll cut thick chunks of cucumber and top w/the chicken salad. I sometimes add on some cottage cheese.

I took myself out to lunch today so this isn’t typical, but I ate a grilled chicken sandwich on wheat with sweet potato fries.

I eat seasonally - more salads in the summer/ soups and sandwiches in the winter. If I do a sandwich,I choose a whole grain bread that is smaller/less calories and then load my sandwich with veggies. I also typically eat a side of raw veggies or fruit with my sandwich. I cut out chips a while ago.

Brown rice with shrimp with a little chipotle sauce or salsa. Or soup over brown rice.

I often get an egg white omlette or a salad with some protein when I’m out for lunch. In the winter I love a nice bowl of soup.

I eat the same thing almost every day: a parfait made from Greek yogurt with granola and some kind of fresh fruit. I feel like it’s pretty healthy and checks a lot nutrition boxes while also satisfying my afternoon sweet tooth cravings.

Every day, a multi-colored, multi-leaf salad with a homemade vinaigrette and a glass of flavored unsweetened seltzer. It’s my first meal of the day as I don’t eat breakfast.

Today I had that lentil/sweet potato/parsley with brown butter recipe that was floating around from the NYT a month or two ago. I made enough sunday to eat it for the week. Last week I made overnight oatmeal (oats, greek yogurt, chia seeds, milk, apples, craisins, vanilla, cinnamon) that I brought every day for the week.

Basically, for the last month I’ve been trying to figure out what I can prep on Sunday that will get me through Mon-Thurs at least. But I’m bored of everything I make.

I eat ~6 meals per day, rather than a traditional breakfast / lunch / dinner. My most typical near noon meal is rotisserie chicken, fresh fruit, and oatmeal. I buy the rotisserie chicken pre-cooked at the supermarket, so this meal takes under 5 minutes to prepare, most of which is waiting for the oatmeal to microwave. Cost is between $1 and $2.

My favorite lunch lately has been cottage cheese topped with a small amount of chopped smoked salmon, mini cuc slices, avocado, cherry tomatoes, and a little red onion sprinkled with everything bagel seasoning.

My usual - a bag of Mediterranean chopped salad from Costco with some cooked chicken and half of the dressing. I’ll toss in some of the cheese and crunchy things if I feel like it.
The protein can vary from chicken to leftover meat, fish, or shrimp.

I’ve had this most days unless I’m away from home, then I’ll stick with some kind of salad or soup. It’s been about 15 months & I’m down over 55 lbs cutting out most added sugar and starchy carbs.

Cottage cheese is having a moment - recipes are appearing all over my feed. I haven’t eaten it since my childhood but many of the recipes look appealing (including using it as a mix-in ingredient) so I really need to pick some up and get back into it.

I typically graze for lunch and will sometimes have a mini-charcuterie (my kids make fun of me for this). I’ll do some prosciutto, salami or ham with different cheeses, some nuts, fruit and maybe a scoop of humus. Or I may do some raw coconut yogurt (high probiotic count) with some berries & granola. Once a week I’ll do a Jersey Mike’s Italian breadless bowl. I’ll drizzle on some dressing and shake it up. It ends up being more or less a chef’s salad.

Today I had fish tacos but I’m not sure if that’s what you are looking for.

Yesterday I had cheddar cheese and roast beef open face sandwich that I heated up in the air fryer to be nice and toasty. I’m not a big mayo person so had some grainy mustard. Grapes on the side, I like to have some fruit but we’ve eaten most of what we had so grapes it was.

I like easy.

Lunches here are usually leftovers from the day before or a salad with some protein. We try to eat the bigger meal at lunch and oftentimes have the so called “girl dinner” for - lol - dinner. Meaning just some cut up vegetables and some cheese with a glass of wine or fizzy water depending on the day of the week.

I made the viral cottage cheese bagels this morning - delicious and easy!

Lunch is often leftovers from a previous dinner in some shape or form. Today it was leftover chicken stir fry with rice. I often either make soup or buy a two pack of soup like tomato basil from Costco and have a bowl of that with some shredded cheese to top it and then some raw veggies. I also do a girl dinner lunch!

I like a good breakfast that I eat around 9am during the week or after 10 on the weekend after being up a few hours so lunch is probably my smallest meal.

I eat lunch at work. To make packing easy, every Sun I shred (thinly slice) up a head of cabbage and a bunch of kale and throw it in a big Tupperware container. They are both hardy veggies and stay good through the week. Each night, I throw some into a smaller container and top with a protein (I’m mostly vegan, so it’s typically air fried tofu, pepitas, or lentils that I roast until crisp in the oven), a carb (pommagranite seeds, berries, sweet potatoes, quinoa) and a dressing (currently it’s hummus thinned with water). Because the kale and cabbage are so hardy, it works well to put the dressing on the night before.

My three (3) “go to’s” are:

  1. Cooked chicken (or other protein), broccoli, spinach, quinoa/rice/brown rice/cauliflower rice/sweet potato/potato.
  2. Omelette or scramble with veggies and either smoked salmon, cooked chicken or sardines.
  3. Pancakes (no flour) made with 1 banana, 2 eggs, a scoop of protein powder, pumpkin, seed combo, etc.

OK, I read that as what did I eat today.

Most days, I have 3/4 cup basmati rice, oven-roasted veggie medley (four kinds of bell pepper, onion, garlic, carrots, broccoli) and boneless/skinless chicken. I make a homemade teriyaki sauce and put a couple of teaspoons on the whole thing.
