i recently went to the information session at UNC: Chapel Hill, NC.

and the person talked about submitting a “School Profile” for example:
“my school only lets sophomores take 1 AP Class”
“AP US History in my school is really hard for everyone”

So, how do i submit that? is it on the common app? or do i just have to write things and send it in?

I think this is something the guidance counselor sends along with the recommendation. Ask your GC about this. They want to know that a student has taken the rigorous classes offered at their particular school.
Also, in some schools, a class may be very challenging. In this case, the highest grade might be a B, but students get 4’s and 5’s on the AP test. If several students apply from your school each year to UNC, they may be aware of this pattern.
Your GC should explain all of this to the schools you apply to. Many high schools have a school profile available that they send routinely.

Your GC will send the school profile which outlines how the school grades, ranks, course ranges, etc. You can ask to see your school profile yourself.

You should ask to see the profile before it is sent as they can be out of date: listing courses that are no longer available, don’t have current policies for when APs can be taken, etc.
