<p>from my understanding, they are chicken eggd - egg yolks. but if egg yolk goes away, where the yellow color comes from? after all, egg white is supposed to be semi-clear. at vons, a jar of egg white was sold for $6 or so while egg beaters of comparable size were only $3.50. what’s the reason for such huge difference? that seems to indicate “egg beaters” aren’t really egg whites and are inferior.</p>

<p>For years now (well over 10) I have puchased whole eggs, and then separated them myself as needed. It’s far less expensive than egg beaters or egg whites sold, and I know thay’re “just” egg whites.</p>
<p>LOL, now that is something that my grandmother, and mother would have said.! BTW, my grandmother, and her DH lived a healthy life into their 90’s. They kept things simple, with health and budget in mind. They would neverhave been sold part of an egg w vitamins and minerals. In fact, they ate their yolks, and never took cholesterol lowering drugs either. I am not advising that anyone follows what they did, but I am just commentiing upon their lifestyle and longevity.</p>

<p>the problem with me is that egg whites separated like that had no taste to me. the egg beaters i had this morning had “southwestern” flavor. i guess other people would add stuff to it but i don’t really know how to cook and need to have it as simple as possible.</p>
