What I cooked tonight

^ H didn’t want to pay the price for fresh lobster pieces ($30 pd) so he bought frozen. Since it was going into a dish like Mac & Cheese it didn’t really make a difference. I love lobster and wouldn’t have known it was frozen if he hadn’t told me.

@oregon101 for any recipe that calls for lobster you can use Dungeness crab. It might be a betrayal of my NE roots, but I like the crab better. One of my favorite pasta dishes is a lobster fra diavolo (spicy tomato sauce) I used to serve the one summer I worked on Cape Cod.

Last night we ate light because of meetings in Seattle, reheated turkey soup we had made over the weekend and the other half of my “coconut cream pie for two” from Seastar restaurant on Saturday. Usually not a problem I have, but I couldn’t convince anyone to share with me.

Magnetron, I did not think that coconut cream pie for two was that good… Their panna cota, OTOH… No one touches mine! :slight_smile:

Ate leftover salmon and salad for dinner last night.

Sunday night was baked cod and potatoes.
Last night was even simpler. Brats (boiled in beer and then finished in a frying pan) and Tater Tots-- nothing close to gourmet but quick and easy. Also a meal that neither kid likes so we had to have it one last time before they get home.

H made a shrimp fra diavolo a few Xmas Eve’s ago. He’s Italian so always sea food on Xmas Eve. The dishes are always a lot of work so we just do lobster now. So much easier and a lot less time spent in the kitchen.

wow. I just made enchiladas with beans and corn. But, I did make oreo cookie "truffles’.

Full on Christmas spirit today. Spent all day shopping w D and all evening baking cookies - sugar cookies decorated w royal icing and fruitcake cookies. Dinner was macaroni and cheese from our local Cook shop - they do gourmet frozen meals. Nice to have it around the corner on those nights when I can’t or don’t feel like cooking.

Caldo Verde soup tonight. Easy and fairly healthy. Trying to stick with quick and lighter meals this week with so much to do and knowing it will be caloric overload starting this weekend with parties and family events heading into Christmas.

Grilled pork chops, Spanish rice and sautéed zucchini.

I love it @musicamusica. Last spring when my sister in law came to visit for high school graduation I asked her what she might like to have for dinner one night and she said, “wine with a side of wine.” Your post reminded me of that and how funny I thought it was at the time.

Did no better–ravioli that was expiring, old tomatoes and a bit of old asparagus sautéed, a Trader’s Joes frozen
pizza like thing and also their Asian pancakes ( totally did not go together) and bagged kale salad.
But a nice cocktail and I was more tired than hungry.
Spent the day gift shopping, exercised, and grocery shopped at the cheap store (meaning bagging yourself and such but go for stuff like dairy and pickles and mustard).

I got out the Vegi Epi menu book and made black bean soup with a topping of chipotle sauce. Had roasted veg (sweet potato, onion, tomato) on the side. It was all yummy but took too long to cook! DH made a simple salad of oranges, olives and the good extra virgin olive oil.

Mathmom, I want to come to your house for salad night - you always have the best salads!

OK , making up for my sins, it’s Salade Niçoise tonight.

Today was holiday candy making day - choc covered pretzels (white and milk), dark chocolate coconut truffles and mocha raspberry truffles. But still had time to do baked lemon dill salmon, and roasted potatoes and carrots. And avocado/tomato salad. Luckily I had D to help. Now just have to box up all of our goodies and deliver tomorrow.
