Hmm, never thought of that (with a white eggplant). Let us know how it turned out!
The skin is usually tougher and the “flesh” is more dense, which makes it better for grilling vs a regular eggplant.
Thanks. No one here will eat grilled eggplant. I’ll peel before I make the eggplant parm.
It will make a terrific Baba Ganoush… or addition to a moussaka (think Greek, Israeli, any of the Mediterranean cuisines…)
