^^Around here thy’re called Mexican Wedding Cookies and all the bakeries have huge trays of them in their display cases.

They’re really easy to make. No eggs, no baking powder, no milk. Just ground pecans, flour, sugar, butter and maybe some vanilla. Shape them. Bake them. Roll them powdered sugar while they’re warm.

well with the college decision process I had Ben and jerry’s red velvet , my new quilty pleasure… no intolerance issues thank goodness!

wow…haven’t noticed that yet…

While waiting for S2 to call me after taking the MCAT on Saturday, and our nerves were on edge, we did go to Cold Stone…oh my…sweet cream with almonds and coconut. Heavenly. I’m glad that I don’t have one too close to me…that could get BAD!

The homemade peanut butter cupcake loaded with milk chocolate chips in the batter and topped with homemade peanut butter frosting that I am eating right now. Keeper. :)

I’m floored by how many people love coconut.

To me, it is one of the most vile, disgusting foods on the planet. I loathe it. I can pick out the smallest amount in anything, and the taste of it ruins whatever it is in.

One of the worst things ever is to pick out a piece of candy from a box of chocolates, only to bite down and discover it’s a coconut one, then I have to spit it out and go brush my teeth. Bleh. :D

On the other hand, I’m glad that Panera posts calories on their bakery items, every time I go in there I spend 5 minutes drooling over the bear claws et. al. It’s a lot easier to resist knowing it’s 500 calories.

I’m allergic to milk and don’t often get treats anymore… but I just made a dairy-free root beer float with soy ice cream and stewart’s root beer. I think I’ll have a sugar buzz for a week but I am in heaven!

I wonder why some either hate it of love it. I <3 it.

NRE, sorry you don’t like coconuts. My favorite ice cream is fresh coconut. I do not find it easy, but after taking an ax to a coconut, then. Utting out the fruit, chilling it, such a great snack.

We know who we are . . . the whole Coconut Obsession is interesting. I am totally immune to the allure of chocolate but swoon at the sight of coconut anything. DH tells me it’s because I AM a nut . . .

If you get the right brand, it’s delicious and it’s virtually impossible to taste a difference. If you get the wrong brand, it is vile-- the texture is all wrong and it has a funky soy taste. I won’t eat it unless it tastes like the real thing, so I had to try a few before I found the right one. I buy Purely Decadent and every flavor I have tried has been delicious, and the plain vanilla is better than any real vanilla I’ve tried. I have probably eight different flavors of the stuff in my freezer. I like tofutti ice cream sandwiches, too. And, since there’s no milk, there’s usually a lot fewer calories… I can usually find these at Kroger, when I can’t I need to get it from a health food store.

Add me to the anti-coconut club, though. When you buy Purely Decadent and So Delicious, you have to be careful not to buy the coconut kind by accident. They make both coconut and soy.

Another guilty pleasure is blueberry bagels with dairy free cream cheese, my lastest dairy-free discovery. Galaxy Nutritional Foods makes a perfect cream cheese substitute. I ate them for breakfast every day for a week before I had to admit they were calorie bombs, even with the fake cream cheese. Bagels are a sometimes food…
