I was reminded of this thread as I realized we are having last minute guests for dinner tonight and I’m working today so needed something quick and easy. This is my go-to recipe for these situations! It’s an instant pot recipe (we haven’t had that thread active in awhile!) and is always a hit. For the most part, I usually have these ingredients on hand.

My go to is shrimp cocktail. I get very large shrimps with shell on and only cook it until they turn pink (1-2 min more if prefer well done), run them under cold water then peel. I usually leave the tail on for easy pick up. I chill them before serving.
My kids always ask me to bring it because they claim they can’t do it right.
I used to do the charcuterie board, but D2 has taken over that. She is very good at picking out the creamiest cheeses.
Made this a couple times this week, and all enjoyed.
