Apricot Scones
3 Cups flour
1/3 Cup sugar
1 t salt
2 1/2 t baking powder
1/2 t baking soda
1 1/2 stick cold butter - cut into cubes (I quarter the stick lengthwise and then slice into cubes)
1 Cup buttermilk
1/2 Chopped dried apricots
Mix the first six dry ingredients. Quick mix the cold butter cubes. Quick mix in Apricot pieces. Divide dough into two pieces. Places 2 8" diameter discs on parchments paper. Partially cut into the top to divide the scone into six pieces. Brush on an egg yolk wash and sprinkle with sugar (I use a large grain diamond sugar) You are going to need to check your scone for doneness but I convection bake at 375 degrees for about 20 minutes. I don’t know the conventional oven timing.
