It’s January, time for some comfort food. The weather sure is for something warm and cozy!
I made these beef short ribs tonight and WOW soooo good! Mostly followed the recipe except reduced the wine to a cup and increased the beef broth to 3 (was at the end of a bottle of red wine and didn’t want to open another) Also added some mushrooms and a couple of golden potatoes o wanted to get rid of.
H made a stew today as well. He used this recipe, which calls for sirloin tips. Plus, he substituted arrowroot for flour and homemade beef stock for water. It really did hit the spot.
Just noticed the recipe above had you strain the sauce. I didn’t do that - and wouldn’t! We like the chunks of vegetables. My beef short ribs were also boneless.
Just had braised short ribs with marscapone polenta for dinner at a new restaurant last night. And it reminded me of my favorite short rib recipe from the Pioneer Woman served over goat cheese polenta. One of my favorite winter comfort foods.
We finally dragged our grill back onto the deck after the big rebuild! Haven’t had any grilled food since September! Steaks were our “comfort food” last night. Mr. said those were the best steaks he’s ever had (he definitely forgot the first steaks I made on this grill when we just got it).
I made broccoli cheese soup last night and made jambalaya for the first time tonight. Both were delicious and perfect for our unusually cold weather in South Texas,
Last night we had meatballs and sauce of pasta. Tonight we switched it up and had it over sliced polenta (from a tube, sautéed in a fry pan). It was a nice change.
We like the convenience of frozen precooked meatballs. But oh so salty. I grew up eating meat sauce (browned ground beef), not meatballs. Does anybody have a good recipe that freezes well?
