What's for dinner at your house II

I’m thinking steak on the grill tonight with grilled zucs. It’s still wintery-ish hear but I think I am going to retire my winter menus for the year.

It is of Indian origin and if you get it in a restaurant it will be in a thicker “gravy”. This is a light version and only has the NF yogurt to added at the end but no cream. It was much lighter than usual but I liked it better. You don’t have to wait the 15 minutes at the end before adding the yogurt if you just temper the yogurt before stirring it into the chicken mix. I added carrots with the potatoes and sprinkled a few dry roasted peanuts over it just before serving.

Today we are having the Jewish version of Corned beef and cabbage…Reuben sandwiches! Yum!

Pulled pork sandwiches with coleslaw. And looking at the size of this pork shoulder, we are going to be having this all week.

Having the steak I was thinking about grilling yesterday.

Cheese tortellini and homemade meatballs. Lots of good pesto for on top! Salad.

Costco Chicken Tika Masala (premade pouches in a tray) over roasted cauliflower. yummy and almost made me forget that I’m watching refined carbs and had no naan.

Same here, Ellebud! :slight_smile: But I did make lunch: fruit and sandwiches.

I made chicken with sun-dried tomato sauce. This recipe, very tasty: http://damndelicious.net/2014/11/22/chicken-sun-dried-tomato-cream-sauce/ I was looking for something to do with chicken thighs and cream. Served it with Brussel sprouts which I sauteed with some shallots and pesto.

Curry carrot soup with a garden salad.

The soup was really good. I used the 2lbs of carrots from my CSA box- really sweet and fresh. Substituted homemade chicken broth for the veggie broth and used Penzy’s Vindaloo for the curry and added a dollop of sour cream.

D2 is home and cooked us dinner: pan seared/then baked chicken breasts marinated in juice from fresh oranges and other spices (was really really good), fresh roasted brussels sprouts, mushroom risotto.

Delicious, and hey, I didn’t have to cook. :wink:
