Home made hot pockets with store bought pie crust and puff pastry sheets. Filled with plum jam, chicken tenders lightly sauteed with rosemary, chopped scallions, and brie.
Yes, I know that most of the people posting on a thread like this (I started the 1.0 version) like cooking and/or eating well/healthy! Just a little humor…and noting that if I should decide it’s a tater tot night (yes, we did have one last week! - some leftover tater tots from a holiday recipe - we baked them and then topped them with a little bacon, jalapeno, feta, chopped red pepper and onion, avocado and pesto - they were amazing! Top them with whatever you want!) I probably just won’t post it!!!
Everything on 2.0 sounds delicious. 
This is what we will be eating! Spinach salad with chopped apples, avocado, hard-boiled egg, chicken breast, and amazing miso dressing from Costco.
@abasket, we often throw tater tots into the oven when entertaining guests and grilling burgers at the lake house. They taste better than frozen french fries, IMO.

Don’t worry–I’ve had my fill of chicken nuggets! but lately “calling it dinner” is a salad of some sort. We keep the frig stocked with veggies and salad and go from there. Favorite is grilled veggies of any sort. I try to keep salad fixings cut up and ready to go. Tater tots–I’ve always hated them so they are not on the radar. Red potatoes are fab left over however. Or baked potatoes.
Oh and you should know my motto is anything worth eating is worth eating twice. My sil even quoted me saying it in her cookbook! Just not tater tots! I actually don’t think I’ve ever had one so I don’t know what I am missing. :D.
I have a miserable cold/deep cough so I plan to have more soup. My favorite right now is chicken barley. Sauté onion, carrots, celery, and mushrooms with a little garlic. Add 1/2 cup barley, 4 cups chicken broth, cooked chicken, thyme, and bay leaves. The last time that I made it I also added quinoa. Hot chicken soup feels so good on my poor tortured throat. Unfortunately, I have to find something for my husband who will eat cheese and crackers if I don’t cook for him.
An easy to make Mulligatawny soup with naan.
@nrdsb4 London has a great dearth in Tex Mex ever since the Texas Embassy closed (restaurant, not real embassy
) We’ve found a pretty good delivery place, even though it describes tortillas in its menu as “pancakes”. The best chain is Wahaca - which serves uppity street tacos with weird flavors. Tonight, their special was roasted crickets in some sort of mole sauce. But their pork pibil tacos are awesome - as are their margaritas. But I still miss a good ol’ cheese enchilada.
we are having…pheasant! H & goskid went on a hunting trip to midwest in December and returned with many. hmm…
I’ve never prepared before, but will give it a go with a recipe from the chef at the hunt club. (Double checked and I have lots of popcorn, just in case…) Kind of praying this has been checked off the bucket list and they won’t be doing this again…
Tonight we’re having grilled pork tenderloin with roasted potatoes and veggies.
Tonight is grilled chicken breast boneless but with skin topped with a feta pine nut relish. Probably serve with quinoa and a salad. I bought a block of feta last week at Costco and I am trying to use it up.
@nrds, I meant chopped shallots, not scallions. I adapted a newspaper recipe that had them with cranberry sauce and spinach, and thyme as the seasoning on the chicken. Those were good too. They’re easy to make (toughest part was thinning out the dough) and can include so many combinations. I made extra and froze some.

Everyday black beans with onion and cumin, tucked into corn tortillas, with garnishes of cilantro, grated cheese (cheddar, because I have it, though a mild white cheese would also be good), scallions, avocado, salsa, thin-sliced cabbage, and sour cream.
Some sort of pork almost always creeps into the pot when I cook beans, but this time they’ll be veggie because our dinner guest is of Jewish heritage, and was brought up not eating pork.
Leftover chicken curry with rice. I found a shrimp curry recipe, but since I don’t eat seafood, I adapted it for chicken. I use boneless skinless thighs. Nice and spicy; contains a lot of ginger.
And I have made, and continue to make in my current life, Tater Tots. DH loves them, and I’ve come to like them too.
Wow, I want to put in an order of those black bean tacos!!!
Just 2 rolls, no butter. That’s what for dinner tonight. Tomorrow, I will get beef and broccoli and steamed rice.
I am taking it easy tonight since I got home from the gym late. Just going to do BLT’s and a salad. Easy breezy and the boys won’t complain.
