What's for dinner at your house II

I made the plainest go to dinner tonight…simple marinara sauce with spaghetti and romano cheese.
I am gearing up for our friend ( former sponsored int’l student ) to visit for the next several days…he loved my cooking so I am planning out some of his favorites

I have been making chicken soup for a woman that is suffering from terminal cancer. I made it for her at the end of December and it has turned into weekly thing since.

It is apparently the only thing she can eat without getting sick to her stomach.

I do make some awesome soup, if I do say so myself

We ended up with an old 60 Minute Gourmet recipe. Porkchops sprinkled with paprika then you make a pan sauce with some finely choppped onions, white wine (I used vermouth), chicken stock and sour cream. I boiled some steam beans and then sauteed them briefly in bacon fat left over from breakfast.

Tried a new recipe last night- Spicy Peanut Crusted Tofu Tacos- even my “have to have meat every night” husband liked them. I usually love potato or fish tacos but would make these again anytime. Made a pot of tortilla soup for tonight. It was 75 degrees today so not exactly soup weather but I love tortilla soup. And yes- we have those nights where we just throw burgers on the grill and tater tots in the oven, although I have been trying to substitute fruit for the tater tots lately.

We had chicken pie and peas.

Last night I made pork stuffed cabbage rolls. It was really good, I got it out of a one pot cooking cookbook I got from Williams-Sonoma. It’s something my daughter would have turned her nose up at so now she’s back at school I can try different things. And I worked a long day, and we put our 17 yo cat to sleep tonight, neither of us felt like cooking so we had thai.

eyemom, so sorry about the cat!

Cabbage rolls sound good right now. The oven might be out of commission longer than I thought. So tomorrow, I will try to make a roast in my new multicooker.

@takeitalian I have never heard of potato tacos. What is in them besides the potato?

@eyemamom, I’m so sorry about your cat. I’m a big cat person even though my avatar is of my late beloved lady. They are wonderful friends, often misunderstood by many people, but WE know differently. Take care.

Tonight - chili!! (It’s cold here) Haven’t decided whether to make beef or chicken. Serve it with tortillas and avocado salad.

Thanks abasket ! Odd thing is, this is not what I would call a friend. It is my stepdaughter’s grandmother , and she has not been a fan of mine , but she has few people around her. My husband’s ex doesn’t cook and my stepdaughter wanted to take a leave of absence from school to try to take care of her ( no one wanted her to do that )
I was so impressed by her dedication to her grandmother over Christmas break that I decided to help out with that part of her care.
I have made other food , but apparently this is about all she can eat right now. She called to tell me that is the best chicken noodle soup she has ever had , and that I should market it :slight_smile:

What’s your secret?

Honestly, I don’t boil down a carcass. I roast a chicken for one dinner, make gravy and that is the base for the broth. I only put roasted carrots in for the vegetable and chop up the rest of the breast meat that is leftover. The gravy is thinned out with chicken broth , but it has a little more body than if it was just plain broth or stock. Throw in some egg noodles and it is a rather quick and easy soup

We ended up going out to dinner and a movie tonight, so it will be burgers tonight.

I was thinking of also making that buffalo chicken dip that everyone on the Super Bowl snacks thread was raving about.

I have leftover brisket and Indian-inspired potatoes (from two different dinners) that I’m going to turn into Curried Cottage Pie (found two recipes online that I’ll mash-up). And I’ll try a new recipe for Indian Winter Soup (spiced barley, butternut, parsnips, etc) from the bbcgoodfood website. Those will be rounded out with a salad, poppadums, and homemade mango chutney (at least I know those three will taste good…).

^^^^I love it when I get inspiration from leftovers to make something different, and so does DH. He’s not big on leftovers. What a great idea to make that Curried Cottage Pie!

I’ve got a big pot of split pea soup. What should I serve with it?

Last night we had ginger turkey steaks, collards from our garden with sautéed mushrooms and onions and cara cara oranges sliced.

Mathmom- that is a problem I have with soup for dinner since I am trying to avoid bread. Otherwise I would serve fresh bread or a sandwich. Or do like some places and serve soup and salad. Or soup, salad and a half of sandwich.

If I have ingredients on hand that I am not sure what to make I will google them together and see what recipes come up.
