What's for dinner at your house II

Tonight is chicken marinated in a blend of Peter Luger Steak Sauce, garlic, and worcestershire sauce with balsamic mushrooms, shredded Brussel sprouts and oven roasted potatoes.

Oh, GlovalNomad, that sounds wonderful! The potatoes are a great substitute and would soak up the flavor.

Great suggestion @GlobalNomad and I am a fan of Fine Cooking mag.

Chicken fajitas, refried beans with jalapeno and onions for a side and clementines. I bought some of these Rick Bayless sauces the other day to try - used the fajita one tonight - decent and easy! http://www.fronterafiesta.com/store/seasoning-sauces/27

Rich and satisfying dinner tonight: Braised Short Ribs, mixed grain baguette (to sop up the sauce  ), roasted cauliflower, green salad, and baked Bosc pears with frozen yogurt.

We had chicken divan served over farfalle pasta, a Greek salad, and fresh fruit for dessert. I’ve been looking at my soup recipes for this weekend because it is going to be frigid out and soup always feels good on a cold, cold day.

I had a minor dinner fail tonight when I tried to copy something I had in a restaurant the other night It was sweet peas in the pod with tarragon…yuck ! We managed to salvage the actual peas but I think I will try it with haricot verts next time

Last night, we had Costco Asian cabbage salad with chopped rotisserie chicken. Today, I’m officially out of rotisserie chicken, which means I have to come up with a new idea for a quick dinner before Mr B starves. Something grillable or boiled.

I think I ate a whole bag of that asian cabbage salad this week!

Thanks for starting a new What’s For dinner thread.

Haven’t gone marketing since I came back from Florida on Wednesday so not much in to choose from. Made homemade sauce with meatballs and served over spaghetti. Spinach salad with tomatoes, carrots & goat cheese.

I took a whole chicken out yesterday to defrost for tonight. Rice & brussel sprouts (the only fresh veggie I have left.)

I should really go marketing today but it’s too fricking cold out.

Made my new recipie of salsa verde pork stew and followed Global Nomad’s advise to substitute potato for corn. It was a big hit! Trader Joe opens today, will try to see if I can get through the traffic and come up with something yummy for dinner tonight.

Sigh… the oven saga continues… I should write a novel about that! But I made fabulous turkey chili last night, and this is what we had for dinner today. Plenty of leftovers to reheat for tomorrow.

Pasta

Leftovers from our impromptu Valentine’s Day dinner with friends who refrained from driving into a blizzard and sub-zero temperatures for the weekend. Baked salmon on a bed of mixed citrus and balsamic-pomegranate glazed short ribs with mashed potatoes and sautéed spaghetti squash. Mini-chocolate lava cakes with ice cream for dessert.

I’m making a big pot of chicken soup today.

I supported a kickstarter project for a sous vide controller so we finally bought a slow cooker to use it with. With my wife out of town, I decided to just use the slow cooker and made ridiculously good, nuclear hot chicken mole and then unreally good, best I ever ate pot roast. Never knew what we were missing.

My dinners are usually so boring I never comment on them. Since the air temperature here is currently -19, yep that’s right. Sorry that was an hour ago, it’s warmed up to -8 lol!

I made potato corn chowder in the crock pot, I hope it turns out good. I’m not much of a soup maker. Thinking of making the red lobster biscuits from a box to go with it. A gourmet cook, I am not.

I’m making the coq au Riesling that was in the most recent issue of Cook’s Illustrated.

Soup was not great. My soup making skills remain the same, bad! Sigh!

Tonight was pizza chicken. Brown chicken breasts in olive oil in a cast iron skillet. Pour a mixture of marinara and some diced drained tomatoes over the chicken. Top with some fresh basil and fresh mozzarella. Put skillet in oven covered with foil for 45 mins. Top with some extra mozzarella and uncover in oven 10 mins. Served with a side of pasta for the family (I don’t want the extra carbs!) and some pickled beets (THOSE are for me!)
