Did you follow a recipe?

I make this one or I buy a mix (usually have all sorts of good soup mixes at apple farm stores in my area.) Then I just add the potatoes and extra corn.

My chicken soup came out perfect today.

The trick to making a good soup is to add the ingredients needing the longest cooking time first, and then keep adding other stuff that needs less boiling time. Oh, and a good hot soup needs some fat. Fat-free soups… Not happening in my house. :slight_smile:

Made an easy and fantastic Scallop and Corn Chowder for dinner tonight. Google Scallop and Corn Chowder Ivy Manning The Oregonian. I’m sorry, I cant seem to link it. It was great with some fresh artisan bread and strawberries.

To warm us up: Tuscan Ribollita, plus pesto-chicken burgers w/ fresh mozz, avocado & cherry tomato (no bun) and baked shoestring fries. Trader Joe’s had shishito peppers today (new item!) so we grilled some of those over a flame for an appetizer.

I’m going full Episcopalian tonight and having pancakes and sausage - easy and the teenager will be thrilled and I can not feel too slouchy because hey, it’s a liturgical thing :wink:

I can’t decide between meatloaf & crash hot potatoes or linguini w/ clam sauce.

Salad Nicoise w/ fresh salmon in place of tuna. Between the holidays and all the comfort food cravings with endless snowstorms here in New England, I need to start eating lighter!

Steak soft tacos with mango salsa and refried beans.

We finished the turkey chili I made last week. Now I have to come up with a dinner idea… What a pain! For some reason, all I can think of is something that required baking! :wink:

Maybe chicken something. With lentils! :slight_smile:

What was I thinking!!! I made fish tonight and tomorrow is Ash Wednesday…

@lergnom tell more about the sous vide device, have you used it yet? Do you use it with a vacuum sealer, I have one and no use for it, it squishes everything horribly.

I have been on a pizza binge. I first made a crust recipe from Kind Arthur with part semolina flour, then switched to the one NYT published from Roberta’s in Brooklyn which uses 1/2 “00” flour, I made a big batch and I pull a ball out everyday and the crust keeps getting better. I even made one for breakfast.

Now I am defrosting shredded taco seasoned chicken, I was going to make enchiladas but I think I am going to make some soup with it. I’m thinking onion, celery, corn, beans, chicken, can of tomatoes with chiles in stock. Is that fresh enough? I don’t have fresh veg. but I have frozen green beans. And I will fry tortilla wedges to add.

I made stuffed cabbage to make DH happy. It reminds him of his mother.

Meatloaf, baked potato, sautéed green beans.

Marinated grilled NY strip steaks - put DH on grill duty in the cold!

I have been making something for myself at odd hours and I had a rare package of bacon and a aseptic pack of cream in the cupboard (from Trader Joe’s) so I am on a Carbonara kick. I love it the way a chef at this cafe owned by Francis Coppola showed me. Wow I just don’t get tired of this, I have had it for late dinner and for brunch, only takes 15 minutes.

For one serving:

1, Bring a medium pot of salted water to boil. Measure out a serving of dried spaghetti for one, I make a generous dime size bunch, circled between my thumb and forefinger. Add to boiling water and cook 9 minutes or to package directions.

2, Meanwhile, heat a skillet on medium low and snip 2-3 bacon slices (or pancetta) into strips, cook stirring occasionally.

  1. In a medium bowl, place 2 egg yolks, 2 Tbsp cream, 2 heaping Tbsp Parmesan cheese and as much freshly ground black pepper as you like (I like a lot, 15 turns of the grinder.) Mix.
  2. With tongs, lift cooked pasta directly from water to the egg bowl, letting a bit of water runoff first. Toss quickly with the egg mix so that the pasta is coated with a creamy sauce. If dry, add a spoon or two of pasta water. If too wet I microwave for 20 seconds at a time, tossing.

Big salads tonight. Chopped up a large bowl of romaine and then had various “make your own salad” toppings including cucumber, carrot, onion, radish, beets, feta, dried cherries, olives, red pepper, cheddar, grilled chicken, cauliflower. Served with some cheddar biscuits I made.

I like the sound of cheddar biscuits!

Dh had his bi-annual cardiology appointment today, so I felt a healthy dinner was in order. Chicken breast roasted with rosemary and sage, roasted rainbow carrots, sweet potatoes and a large green salad. Maybe a bit boring, but tasty,healthful, and easy. And I get to use my new Le Creuset baker I bought on sale at W.S. The biscuits would have been a nice addition. :wink:
