<p>Tonight, pot roast, carrots, spaetzle, red cabbage and homemade applesauce. Have been neglecting family due to another family member’s illness. This will make it up in a small way to them and I will also benefit from the “feel good” vibe of taking care of them.</p>

<p>Today I am roasting a turkey breast, and I will throw in some potatoes and carrots for a really easy dinner. I have a handful of sugarsnap peas in the freezer and some fresh mushrooms so I will give those a quick stir fry.</p>

<p>Thanks to all of you who gave me suggestions when I told you that S1 was bringing home 5 friends…now he’s bringing home 6 friends and altogether there will be 10 of us. </p>
<p>I was going to make pasta with meat sauce or lasagna, but now I’ve decided to do something much easier and hopefully more cost effective:</p>
<p>3-4 Costco chickens cut up, plus hot dogs, chips, salad</p>
<p>This way I don’t have to do a lot of work…I think overall this will be the best solution…what do you guys think?!</p>

<p>Update on smoked trout …</p>
<p>Served with a soup course, then trout lightly sauteed with poached eggs and crusty rolls, and a dessert course (pears with goat cheese and walnuts). DH liked it, I did not. We both thought it was too salty. Still, a nice change from what we usually have.</p>
<p>My label reading problem also extended to the goat cheese, but the version I purchased worked even though it wasn’t what I meant to buy!</p>

Last night we had barbecue pork roast in the crockpot because SI has Special Olympic bowling practice and we don’t get home until after 8:00pm. Tonight is going to be chicken sausage on the grill because it is going to be 78 here in Ohio today so a nice night to grill out.</p>
