<p>I’m excited because I found squash ravioli in the freezer section of my local Kroger store. Making ravioli from scratch would be over my head.</p>
<p>Ohhh, Columbia’s Arroz con Pollo, most delicious! Dinner tonight is steak on the grill with roasted broccoli.</p>
<p>Post #556 reminds me that I should share this fabulous pot pie recipe from Vegetarian Times. My DH, who does not normally enjoy pot pie, frequently asks for this. It’s delicious!</p>

<p>You’re probably right, re: cold stone crabs…it’s been awhile since I had them and I can’t remember if I ate them warm, hot or cold! Cold w/mustard sauce sounds like how I probably had them…Joe’s Stone Crab in Miami, FL, yummo!</p>
<p>Tonight we just finished having homemade vegetable, bean and sweet potato soup with spinach pancakes on the side…I tend to gravitate toward vegetarian even though I love all meats, fish, seafood, etc…I just enjoy vegetarian more often! :D</p>
<p>Tomorrow eve I’ll be making homemade pizzas…loaded with veggies for me and some sort of meat for H & S2.</p>
<p>Butter garlic chicken kabobs…sounds great! I make a great steak kabob in warmer weather…</p>
<p>Tonight was pork roast stuffed with prunes and ginger. I made it with leg instead of loin and the extra fat made it taste much better than usual! I scatter a few shallots around the last 40 minute or so. And pour marsala over it and baste it two or three times. I had roast carrots and turnips with it. And salad.</p>
<p>Chicken piccata plus capellini with arugula, baby spinach, grape tomatoes, garlic & Parmesan.</p>
<p>Spaghetti. And Tums.</p>

<p>You people are amazing. I just cannot come up with some of these gourmet meals after getting up at 4:30 am and working a tough shift at my facility (didn’t even get a bathroom break today). I am just too tired. </p>
<p>Tonight we are having a chicken casserole (rotisserie chicken from whole foods shredded into brown rice with fresh mushrooms, celery, and broccoli with a mixture of the “healthy” version of cream of chicken/cream of celery soup). It’s very tasty, but only requires about 30 minutes prep time and 30 minutes of cooking time. I cannot imagine coming home after a day like today and putting together a meal like the ones described above. Kudos to all of you!</p>
<p>I totally understand Nrdsb4. If you have a Trader Joe’s near you…they sell everything for a lunch or dinner. Vegies are microwaveable, salads are made…chicken dishes, lasagna made…vegetarian,…When I was undergoing chemo I couldn’t cook. We ordered in and went to Trader Joes (and Bristol Farms and Gelsons). Dinner takes 10 minutes…</p>
<p>^^^^^I think Trader Joe’s is going to be coming to Texas in the near future. I’m looking forward to that!</p>
<p>On a good note, DH worked late tonight, came home famished, ate 3 servings of chicken casserole, and said “GREAT dinner, honey!” </p>

<p>Used leftover roast chicken to make a chicken pot pie. Tried to make the recipe a little more weight watchers friendly–reduced butter, used skim milk, only used top crust…tasted great on a cold and rainy night. Added salad and homemade applesauce…</p>
<p>I am making tacos with the whole grain El Paso taco kit. Am using frozen Costco mahi mahi for the meat in the tacos. Canned black beans and a salad. I am feeling a little lazy.</p>
<p>Considering doing the Fish Chowder Idad shared some night this week. I don’t think we could have it without a nice loaf of bread alongside tho.</p>

<p>DH is out of town so I’ll finish off Sunday night and last night’s left overs.</p>
<p>No idea. I had a 6 hour interview yesterday, and a 5 hour interview today (different companies).</p>
<p>My brain is fried, I don’t want to think about cooking right now.</p>
<p>We’re getting our first Trader Joe’s in VT soon.</p>
<p>Arroz con huevos … Fried eggs on rice. Salad if anyone wants it. Too tired to plan veggies today. Haha!</p>
