Are there any particular exams that top colleges like seeing, but aren’t necessarily the most difficult?

like, ap art studio, ap music theory, ap french lit? ap physics c?

All of the ones listed happen to be quite tough exams.

OP, I think you may have answered your own question.

AP French Lit is good, or pretty much any of the other AP foreign language classes, because those can be TOUGH.

It depends on what college you want to enter, and what your intended major is.

MIT, for example, would probably want you to have taken Bio, Chem, Phys B and Phys C, Calc BC, Comp Sci, and other courses similar to those.

A liberal arts school might have different standards.

PROTIP: No one needs to take AP exams.

But, if you’d like one, I suppose English Literature.
That’s an easy one.
