Which is a better course to take (if I want to transfer)?

So, I have two challenging classes, but both of them fit in one timeslot so I can only take one. Currently a Sophomore at UMass Amherst.

Background Info: 3.95 GPA right now, and assuming I get all A’s next semester, will end with 3.97.

I have been allowed to take:
Junior Writing - Economics: I think this would look good on my application, considering I’m a Sophomore?
Methods of Applied Statistics (Graduate Course): considering this is a graduate course, I feel like this would help my application as well? I don’t know how to show this in an application though and if they would even know if I take this course

It’s very safe to say if I take either of these, I will get an A. On that assumption, what is a better course to take in the eyes of a transfer admissions officer?

I think it is a toss up. As a non-admin, between the two, the Method course “sounds” more impressive. But I am not an admin and I have no background in econ…

The good news is, though, that a single class choice is not really the make or break point of your application, so you are fine either way.
