I was wondering if colleges care about the total score itself or do they like consistency with the sections. So, which looks better? A 2100 made of three 700’s or one made of, for example, a 610 CR, a 740 M and a 750 W?

Usually they care about subscores more than they care about the top-line score.

Usually they prefer a well balanced score. But the score you’ve listed above *might *be more appealing to MIT than 700/700/700.

Often, they care less about writing than the other sections.
