Which One Should I Indicate as Major?

I plan to double major in a Humanities major (probably History) as well as a STEM major (probably Chemistry).

Should I put Chem as my first choice major since picking up a Chem major later on will probably be harder (enrollment/demand/course availability) than if I am a History major versus the other way around.

Yes, I know… plans can change. But this is my tentative plan, so please and answer the question (I am equally passionate about both)

Pick your first choice. The likelihood of completing a science and humanities double major is really low. Double majoring works best when the two topics have some overlap. Think Econ/math, CS/math or PollySci/History.

As long as both majors are in the college of arts & sciences, the major(s) you select on your application will likely have negligible impact on admissions. Your choice of major is particularly irrelevant if you’re applying to LACs or liberal arts universities like the Ivies, as you won’t declare a major until your sophomore year. Many students are unsure about their choice of major and apply as undecided – which is totally okay!

I disagree with the generalization in the post above. It’s not at all uncommon to double major in the humanities and social sciences, though it helps to enter with a lot of AP/IB credit. I double majored in Classics and Earth & Ocean Sciences with little difficulty.
