Are there any schools that have the gyms and other athletic facilities open all the time?
The same question is for the food courts. Are there any schools that allow students to come and grab something to eat any time of the day, like from 6am to 11pm?

Covid has had an impact, but before, the field house at Lawrenceville was pretty much always open during “regular hours” (7 AM - 8 PM).
Dining hall is only open during mealtimes, but the school store and Bath House (on-campus café) have different hours; also, you can always go to Main Street to buy stuff. Many Houses also have concessions stands where boarders can buy food during study hall (8 - 10 PM).
I’m not under the impression that any school lets students out of their dorms/the library/other study spaces past 9 PM on weekdays, by the way.

This is a question I wish I had asked during the application process, as it ended up being an issue for my early riser athlete. PA weekend Commons hours are 10/10:30-1:30, then 5-7. We end up ordering food from Amazon like cereal, bars, etc so kiddo can eat in the morning on weekends.
The gym is not open 24 hours, but this has not been as much of an issue. I’m not sure of the hours. I ended up buying a few exercise things for the dorm room (jump rope, etc). Plus, running outside/running stairs always an option. In non COVID times, going to local YMCA was also possible. But as stated by @confusedaboutFA , adherence to sign-in hours ultimately restricts any late night activities outside the dorm.

Some of my rower friends even keep ergometers in their rooms!
I know at Lawrenceville, students are allowed to keep mini-fridges in their rooms under certain circumstances. A lot of people keep food in those. Also, ramen is very popular. There’s also fridges in common rooms, and theft isn’t a problem from what I’ve experienced.
Hill- gym usually open from 6:15am to 9:30pm on weekdays. 7:30pm on is reserved for seniors on school nights.
dining hall-breakfast opens around 7:30. closes at 8:45ish. they are sometimes lenient on these times. lunch is usually seated. during quiet period, it’s assigned buffet. dinner-opens between 5-5:30 pm, closes at around 7:30 before check in.
The Grille, where warm food is available, is open 8-4 on school days and then again 6-10. weekends vary.

DA has their field house and gyms open pretty much all day. There are multiple gyms, a golf simulator room, an indoor crew tank, and erg place, an awesome pool, indoor & outdoor ice rink, and the indoor turf-field house.
In addition to the main dining hall, there are two places to get food. During the day, many students hang out at the cafe in the science center. In the afternoons and evenings there is “the Greer” cafe with TVs & fireplace in the athletic complex. This is also a big hangout place on the weekends for watching sports and getting snacks. Also, at night, many students get “take out” from the Deerfield Inn (share pizzas, truffle fries, wings)
