I know Tufts School of Engineering is very selective and difficult to get into. I am surprised at how low it is ranked in US News (71?) What is the story here, anyone?

Easy. It’s small (~175 graduating students every year) has a tiny grad programme, and is part of a LAC, not a technical institute.

Harvard is ranked really high in US News but looked down upon by employers, because it’s not even real engineering. Generally, the things that will help a programme have a high US News ranking are: size, size of grad programme, and being part of a technical institute.

Except for the last one, most of those things aren’t at all helpful. If there’s too many grad students, then you get taught by them and they take all of the good research spots. If the school is really big, you’re in classes with 300 of your closest friends, not 25 of them.

The education is great. Any employer who knows the school thinks highly of it. Ignore USNews.
