Can someone explain what value it is to take Organic Chemistry 2 for a Chemical Engineering major? Ochem2 defined as study of aldehydes, ketones, acids, amines, polymers, polyfunctional compounds, and spectroscopic analysis. Is it very important or a waste of time?

When you work in a plant that produces “aldehydes, ketones, acids, amines, polymers, polyfunctional compounds” or need to analyze a compound with mass spectroscopy, that course comes in very useful.

If you’re going into a traditional ChE role, it’s one of the most important classes you’ll take. If you’re going into a non-traditional role, YMMV.
