I love mangoes but am always disappointed by the ones I can get locally.

There are hundreds of varieties of mangos. Here in the Tampa area we can buy several varieties of the trees. Indian grocery stores carry different named varieties with tags describing their fruits’ characteristics. The regular grocery stores do not tell the variety- they just carry “mangoes”. Have to watch seasonally for those with more/less stringiness (my Indian H taught me some are juice mangoes, others eating). btw- there are several varieties of spicy mango pickles.

Champagne mangos (Ataulfo) from Sam’s Club are my favorite and are not stringy at all.

We’ve used it for dipping tortilla chips or as a topping on salad. Actually, we pick through thru the refrigerator and cupboard to see what might be good I forgot to brown the n meat and it turned out fine, but needed more cooking time. I also like Dole,s chopped salad. It has,more of the consistency of slaw Naturally I add things to sans,it up and requirements to let flavors meld. Third I buy chicken tenders or nuggets in the grocery deli dept. I put them in a pan and add pineapple and peppers and such and add a jar of sweet and sour sauce. I have rice often brown cooking. Again something that can be modified. All,three are quick and easy. I call this making leftovers from scratch.

Ataulfo and Kent mangoes are the best. Indian grocers carry the best ones usually but avoid Hayden which is quite stringy. I’ve been quite pleased with the ataulfo mangoes from Costco. Also the Marathon brand (for ataulfo and kent) is better than most others.

Mango question–how do you tell if a mango is ripe? I have a couple of recipes for ceviche that call for mango. My H goes fishing in the summer and cebiche is a good way to use the stripers (Atlantic striped bass) he gets.

Do you know the easy way to clean a mango? Using an empty tall glass to release the mango from the skin? Magic!!
