<p>I’ve been salivating over at the favorite dinner recipe thread, but c’mon! Seven ingredients?! Chop onions?! Puree tomatos?! What am I, Wonder Woman?</p>
<p>I hope someone can contribute a couple of quick & easy recipes for the cooking challenged. Her is my entry. This was served at a party last night, and it was delicious.</p>
<p>Spinach Pie</p>
<ul>
<li>a package of 2 ready-made pie crusts</li>
<li>a package of Stouffer’s Spinach Souffle (frozen section)</li>
<li>Swiss cheese</li>
</ul>
<p>Unfold both crusts. Crumble the thawed Souffle and divide equally over half of each of the 2 crusts. Cover the souffle with Swiss cheese.</p>
<p>Fold over each crust & pinch shut. They should look like 2 giant flattened fortune cookies.</p>
<p>Bake @ 400 (~ 20 minutes) on an ungreased cookie sheet until golden brown. Cut into strips.</p>
<p>My mother had the advantage of her parents living with us (at first only during the week, and later on it was 7 days/week). Grandma did all of the cooking, and the laundry. Yes, we also had lots of canned goods!</p>
<p>1 wheel of brie
1 crescent roll package
apricot jam</p>
<p>Piece together the crescent roll triangles to wrap brie. Place brie on it, add tablespoon or so of jam, close the crescent roll. It’s okay if it overlaps, bake at 375 for around 18 minutes until it is brown and and looks done.</p>
<p>Serve with crackers, french bread or just eat it as is, like my H does.</p>
<p>Sauteed yellow onions.
Big piece of red meat cooked in onioned oil
Scallop potatoes cooked in meated flavor, onioned oil.
Grapes.
and a lady to serve it all.</p>
<p>-a cooked rotisserie chicken (pull all of the meat off)
-pack of large flour tortillas
–shredded cheese
–anything in your fridge like bbq sauce, taco sauce, jar of roast peppers or sundried tomatoes</p>
<p>-Place tortilla on counter. Place some of the cooked chicken, shredded cheese, sauce of any kind you like, and whatever else you feel like putting in there on about 1/3 of the tortilla.
Fold the edges of the tortilla in and then roll the tortilla to seal shut. Then, smear a little butter on the top and bottom of the filled tortilla roll. Grill it like a grilled cheese sandwich in a pan until golden on both sides. Place on plate. Cut in half. If the cheese isn’t nicely melted, just microwave the chicken wrap for about 15-20 sec. until the cheese melts.</p>
<p>This is husband’s favorite recipe for “leftover chicken”.</p>
<p>Grilled Costco filet mignon: sprinkle steaks with some Montreal steak seasoning, grill. Serve with mixed baby green salad mix/oil+vinegar and red onion dressing. Fancy dinner in less than 20 minutes.
Pretty much anything grilled has very few ingredients and cooks very fast.</p>

<li>Lamb chops OR Flank steak OR Any Kind of Steak</li>
<li>Baked potatoes done in the microwave</li>
<li>Vegetable done in the microwave</li>

<p>Actually, that’s pretty much what we eat four nights out of seven.</p>
<p>Some clever ideas here. My mom’s two ingredient of meat and a can of something required that the can was some kind of Campbell’s Soup…no store brands allowed.</p>

She even put it in macaroni and cheese.

<p>I * did not* learn to cook from my mother.</p>
<p>what I had for dinner- smashed avocado- with salt and pepper on whole wheat toast.
I did make H a turkey pot pie though- but he says it had too much tarragon.</p>
<p>1) seared the salmon flesh side down in a skillet with a little butter until it was slightly browned. Turned the heat off, waited a minute to let the pan cool (to not burn the skin) and flipped it skin side down. Put it in a 325 degree oven for ten minutes to finish cooking.</p>
<p>2) Sauteed the fresh asparagus in a skillet with butter. When it was almost done, stuck it in the oven to finish.</p>
<p>Salt and pepper (I’m not counting those). Voila.</p>

dijon mustard and apricot jam in equal parts</p>
<p>Smear the mustard/jam on the chicken, sprinkle with salt and pepper. BAke in the oven at 400 degrees til done. (where is the little degree sign on my keyboard?)</p>
<p>ALSO, when I am alone (because no one else will eat this with me), my favorite dinner is hard boiled eggs, a tin of sardines, and a pile of triscuits.</p>
<p>AND, a basic pasta recipe with endless variations depending on what you find in the refrigerator:</p>
<p>Pasta.
Minced garlic (lots), or put a few cloves through a garlic press</p>
<p>Heat a lot of olive oil (at least 1/4 cup) over medium, add garlic and cook briefly (don’t let the garlic turn brown!). Pour over cooked pasta, add salt and pepper, fresh chopped parsley if you want to get fancy, and lots of grated parmesian.
To this basic recipe you can add (right after the garlic cooks a little bit in the olive oil), some chopped tomato, or cut up zuchinni, or cut up ham, some frozen peas, a few slices bacon, etc, or any combination. You can also add some butter at the end to mellow out the flavor.
The good thing about this recipe is it takes about as long as it takes to boil the pasta.</p>
<p>Make an omelet with some veggies and cheese.
Stir fry 3 veggies and cook a pot of rice.
Make a pot of lentils and a pot of rice and add some yogurt on the plate.
Bake a potato and cook some veggies and a piece of fish like above.</p>
<p>The simplier the fare, the better for you. I wouldn’t buy canned anything unless it is fish. Sometimes I use frozen veggies.</p>
